SWEDISH CHOCOLATE BALLS (OR COCONUT BALLS)
This is a classic Swedish recipe, beloved by every Swede. It is one of the first things children learn to make, and it's enjoyed greatly by all ages. The balls can either be bite-sized or giant, whichever seems more appealing. Or make one big ball, and many small ones. Additional cocoa powder or chocolate can be added to intensify the flavor.

Steps:
- Mix the oats, sugar, and cocoa together in a bowl. Add the butter, and use your hands to mix the ingredients together to make a thick dough. Mix in the coffee, vanilla, and chocolate until thoroughly blended.
- Place the coconut flakes in a small bowl. Pinch off small amounts of dough and roll between your hands to make small balls, about 1-1/2 inches in diameter. Roll the balls in the coconut flakes. Balls are ready to eat, or may be refrigerated 2 hours to become firmer.

This delicious smooth confection is an impressive dessert for the holidays. These are wonderful for parties, and perfect for holiday gifts to your loved ones. A half cup of orange juice plus one teaspoon of freshly grated orange peel can be substituted for the rum in this recipe.

- In a large bowl, combine vanilla wafer crumbs, chopped nuts, 3/4 cup confectioners' sugar, and cocoa. Mix in rum and corn syrup. Shape dough into 1 inch balls; roll in confectioners' sugar.
- Store rum balls in an airtight container for 2 to 3 days to develop flavor. Roll them again in confectioners' sugar before serving.

- Melting chocolate can be really tricky to work with. You first want to melt down your chocolate. Remember that melting chocolate should only be heated 30 seconds at a time, stirred, and then reheated until melted. If you over heat your chocolate, there is a point where it begins to re-harden and ruins the chocolate.
- Typically your chocolate will take 1.5-2 minutes to fully melt. You can also use a Wilton Chocolate melting machine. If your chocolate is too thick, add a tiny bit of shortening to the mixture and stir to thin.
- Fill out your chocolate mold. Make the chocolate thick enough that you cannot see the sides of the mold. In my own house, we just used our (clean) fingers because it was quicker to do before the chocolate hardened. You can, of course, use a pastry painting brush if you prefer.
- Once your mold has chocolate in all the semi-circles, put in freezer to firm up. This takes approximately 5 minutes, but I give it 10 to be sure everything is solid.
