- Stir all ingredients until completely mixed. Store in tightly covered container at room temperature up to 6 months.
- For each serving: Place 2 to 3 teaspoons mix in cup or mug and fill with 2/3 cup boiling water; stir. Top with whipped cream if desired. For 6 servings, place 1/4 to 1/3 cup mix in heatproof container and add 4 cups boiling water.

- Heat 1/4 cup coffee in microwave in a mug until warmed, about 30 seconds. Stir cocoa mix into the coffee until dissolved.
- Fill a large glass with ice cubes. Pour 1 cup cold coffee and almond milk over the ice cubes; stir the cocoa mixture and chocolate syrup into the coffee and almond milk.

- Pour milk into a steaming pitcher and heat to 145 degrees F to 165 degrees F (65 to 70 degrees C) using the steaming wand. Measure the chocolate syrup into a large coffee mug. Brew espresso, then add to mug. Pour the steamed milk into the mug, using a spoon to hold back the foam. Top with whipped cream.

GIFT IN A JAR: MOCHA SPICE MIX
My mother and aunt use to make these... It is fun to do and the children can help! This is an easy gift to make during the holidays. I keep several kinds of these on hand for unexpected guests, little thank you gifts and hostess gifts. If you don't use coffee, just double up on the cocoa and be sure to add the powdered milk and more sugar. You may want to omit the spices as well. If I make just the cocoa mix, I attach a decorative bag of mini marshmallows.

- Stir all dry ingredients together well. Put in small pretty jelly jars. Seal tightly. (Stores well up to 6 months).
- Cut pretty circles of cloth about 3 -4 inches bigger than your jar rings. Set circle of cloth over sealed jars and secure by putting a rubber band over the cloth. Put a pretty ribbon over the rubber band and tie the mini bottle of alcohol, then tie a bow. You can print out labels and instructions to attach to the ribbon too.
- Instructions: For each serving: Put 2 - 3 teaspoons of the mix in a cup. Fill cup with 3/4 cup boiling water and stir. For 6 servings: Put 1/4 to 1/3 cup of mix into a coffee pot and add 5 cups of boiling water. Optional: You can add marshmallows or top with whipped cream. A pretty touch is a candy cane for a stir stick.
COCOA MOCHA SPICE MIX
We love hot cocoa on these cold winter nights. This mix went together fast and is a good source of calcium. It warms you when its cold outside.

- In a large bowl, whisk together all ingredients until well incorporated. This can be done in a food processor also, but you'll have to process smaller amounts of the ingredients at a time.
- To make a mug of cocoa, place 1/2 cup of the mix into a large mug. Bring a cup (8 oz.) of water or milk to a boil. Pour water over the dry mix and whisk with a small whisk until well blended and frothy. Garnish with whipped cream and a sprinkle of cinnamon. Marshmallows and a candy cane stirrer are also fun add-ins.
MAYAN MOCHA POWDER
Years ago I worked in a little coffee shop. We had a powdered cocoa mix with spices that was called Mexican Spiced Cocoa. On the can were directions for mixing it with espresso to get Mayan Mocha. I fell IN LOVE with that drink and have been searching for a replacement ever since. The coffee shop inside Hastings has a similar drink, but won't sell the mix to me for home use. So I researched a little, tested a little, and came up with this. To serve, stir 1/4 cup mix with 1 cup hot water and stir.
