COCO-NUT CARAMEL CHEWS

Coco-Nut Caramel Chews image

Steps:

  • Line a 8 by 8-inch square microwave safe dish with plastic wrap allowing the wrap to come over the sides. Spray the prepared dish with cooking spray.
  • Spray a medium size, microwave safe bowl with cooking spray. To the prepared bowl, add the caramel candies, peanuts, white chocolate and 1/2 cup of the coconut. Give it a stir to combine. set the microwave for 1 minute 30 seconds on HIGH. Place the bowl in the microwave and cook 1 minute. Stop the microwave, stir the mixture, return to microwave to cook 30 seconds longer. Remove the mixture and stir. Scrape it into the prepared square pan. Flatten the mixture with a rubber spatula evenly. Cover the top of the candy with remaining coconut, using the rubber spatula to press it in slightly. If the mixture is too firm on top for the coconut to stick, place the mixture back in the microwave for 10 seconds, then resume pressing the coconut into the candy.
  • Allow the candies to cool completely. Remove the entire block, using the plastic wrap to help you pull it out. Using a sharp knife, cut candy into small, 1-inch squares.

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars.

  • Heat oven to 350°F. Grease 8- or 9-inch square pan.
  • In medium bowl, mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press mixture in pan. Bake 10 minutes.
  • In medium bowl, beat eggs. Stir in remaining ingredients. Spread over baked layer.

  • Dip measuring cup into mix and level off;allow to come to room temperature.
  • Heat oven to 375°F.
  • Grease cookie sheets.
  • In a large bowl,combine cookie mix,1 cup coconut,almond extract and egg at low speed until well mixed and dough forms.
  • In a small bowl,beat egg white and water until foamy.
  • Shape dough into 1-inch balls.
  • Dip in egg-white mixture;roll in coconut.
  • Place 2 inches apart on greased cookie sheets.
  • Place cherry in center,pressing down lightly.
  • Bake at 375 F for 11-14 minutes or until edges are light golden brown.
  • These overbake easily so keep an eye on them.

Steps:

  • Heat oven to 350.
  • Mix flour, rolled oats, 1 cup brown sugar, baking soda, and 1/4 teaspoon salt. Add 1/2 cup butter and mix until crumbly, first with a fork, then with fingers. Press mixture into a greased 9x13-inch pan. Bake for 10 minutes.
  • Beat eggs, stir in remaining brown sugar and almond extract. Mix flour, baking powder, and 1/2 teaspoon salt together, then stir into egg mixture. Add coconut and cherries and stir to blend. Pour over first mixture and spread evenly. Sprinkle with pecans. Return to oven and bake 25 minutes, or until lightly browned.

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together 1 cup flour, oats, 1 cup brown sugar, baking soda and 1/4 teaspoon salt. Rub in the 1/2 cup of butter until crumbly. Press into the bottom of a 9x13 inch baking pan.
  • Bake for 10 minutes in the preheated oven. Remove and cool. Make the filling while the crust is baking.   • In food processor, mix flour and confectioners' sugar.
  • Add butter and pulse approximately 15 times, or until mixture resembles fine crumbs.
  • Press in to a 9 inch square baking dish that has been sprayed with oil.
  • Bake on 350°F for 12-15 minutes, or until lightly browned.
  • Cool on wire rack.
  • While crust is cooling, combine eggs, sugar and vanilla extract in food processor and blend well.
