IMPOSSIBLY EASY COCONUT PIE

This impossibly easy coconut pie is legendary among the Bisquick™ community. With over 700 positive reviews, it's a one-bowl dessert that many Betty Crocker fans have been making for years. Creamy and custard-like this crustless pie can be prepped in just 10 minutes, so the next time you're craving coconut, you know what recipe to turn to. All you have to do is stir the flaked coconut, sugar, Bisquick™, butter, milk and eggs until well mixed and pour right into your pie plate. Easy, right?

Impossibly Easy Coconut Pie image

Steps:

  • Heat oven to 350°F. Grease 9-inch pie plate with shortening or cooking spray.
  • In medium bowl, stir all ingredients until blended. Pour into pie plate.
  • Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.

Easy Eggnog Coconut Pie image

Steps:

  • 1. Put eggs, eggnog,vanilla,and soft butter in a blender (Or you can mix it in a bowl-blender is faster)mix 20-30 seconds
  • 2. Add all other ingredients-blend/pulse to get lumps out (if using a bowl mix with spoon or mixer to get the same effect)
  • 3. Pour into a sprayed/greased 9" pie dish. Bake 40 minutes & sprinkle top of pie with nutmeg-optional
  • 4. Continue baking until a knife in center of pie comes out clean-took me 55 minutes total baking. NOT 55 Minutes more.-lol
  • 5. Enjoy----Darn, I almost ate 1/2 of the pie myself!

4 eggs
2 c ready made eggnog
1 1/2 tsp bourbon vanilla or reg. vanilla
1/2-3/4 c sugar
1 c flaked coconut or shredded
1/2 c bisquick
1/4 c soft butter or margarine
a sprinkle of nutmeg during baking

Steps:

  • In a small bowl, sprinkle gelatin over water; let stand 1 minute. In a saucepan, combine the sugar, cornstarch and salt. Stir in eggnog until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in gelatin until dissolved. Remove from the heat; cool to room temperature. , Stir in extracts; fold in whipped cream. Pour into crust. Refrigerate until firm. If desired, dust pie with cinnamon or nutmeg.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch pie plate.
  • Blend eggnog, coconut flakes, sugar, flour, eggs, butter, and vanilla extract in a blender until well mixed; pour into prepared pie plate. Sprinkle nutmeg over the surface of the blended mixture.
  • Bake in preheated oven until set in the middle, about 45 minutes.
  • Cool pie at room temperature until the pie plate is no longer hot. Refrigerate pie until chilled completely, at least 30 minutes.

Steps:

  • Bring coconut milk to a simmer in a medium pot over medium-high heat. Whisk together egg yolks, sugar, and vanilla in a bowl until smooth and pale.
  • Gradually whisk half the hot coconut milk into the egg mixture, then pour into pot with remaining coconut milk. Cook over medium heat, stirring, until thick and mixture nearly coats the back of a wooden spoon, 2 to 3 minutes.
  • Pour through a fine sieve into a bowl. Stir in rum, and refrigerate at least 3 hours and up to overnight. Pour into a pitcher, and serve over ice, garnished with coconut flakes.

2 cans (14 ounces each) light coconut milk

  • Preheat oven to 425°. Unroll crust into a 9-in. pie plate; flute edge. Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice.
