PINEAPPLE COCONUT EMPANADAS
These tasty little treats can be habit forming. I found the recipe in a grocery store circular and have made them several times since.

Steps:
- To make dough: Sift flour & salt into a large bowl: Add shortening and mix with electric mixer on medium speed for 2 minutes (the mixture should look like a coarse meal).
- Add sour cream and stir: Add i/2 of water at a time, stirring until the dough forms a ball.
- Divide dough into 24 small balls and place on plate, cover with plastic wrap and refrigerate 15 minutes.
- Heat oven to 425°F and spray 2 large baking sheets with cooking spray; set aside.
- To make filling: Combine WELL DRAINED pineapple, sugar or Splenda, coconut, and vanilla in bowl; set aside.
- Using the 3 T flour as needed, roll each dough ball into a 6-inch circle.
- Place 2 T filling in the center of each dough round:Roll& pinch edges of dough together to seal: place on baking sheet.
- Pierce empanadas with a fork and brush tops with sweetened condensed milk.
- Bake for 18 minutes or until golden.
- Cool& serve.
POTATO AND CHORIZO EMPANADAS

- Put the potatoes in a large pot and cover with cold water; add the salt and bring to a boil, uncovered. Simmer until fork tender, about 15 minutes.
- Meanwhile, place a large skillet over medium flame. Add the chorizo, and cook, stirring for 5 minutes, until the sausage renders its fat and gets crispy. Add the onion and garlic; season with the cumin, oregano, salt, and pepper. Cook and stir for 5 minutes, until the mixture is soft and has a beautiful red color. Pour in the broth and simmer for 3 minutes.
- Drain the potatoes and fold them into the pan, using a wooden spoon, break up the potatoes into nickel-size pieces. Add the olives and raisins and toss everything together; season with salt and pepper, to taste. Allow the filling to cool before filling the empanadas. Serve with cilantro cream.
- In a large bowl, sift together the flour, masa harina, baking powder, and salt. Stir in the melted butter. Gradually add 1/2 cup to 3/4 cup of water, working it in with your hands to incorporate; the dough should be easy to handle and not sticky. Form the dough into a ball, wrap it in plastic, and chill for 30 minutes.
- Lightly flour your rolling pin and counter. Divide the dough in 1/2 so it will be easier to work with and roll it out to 1/8-inch thickness. Using a 4-inch cookie or biscuit cutter, cut out 10 circles of dough; repeat with the other 1/2.
- Spoon 2 generous tablespoons of filling into the center of each pastry circle, leaving a 1/2-inch border. Brush the edges with the egg wash and then fold the dough over in 1/2 to enclose the filling and form a semi-circle. Tightly seal the edges by crimping with the tines of a fork. Chill at least 30 minutes before baking.
- Preheat the oven to 375 degrees F. Place the empanadas on a buttered baking sheet and brush the tops with additional egg wash. Using a fork, prick a few holes in the top of the empanadas for steam to escape. Bake for 30 minutes, until the pastry is golden brown.
- Cilantro Cream
- 1 cup sour cream
- 1/4 cup finely chopped fresh cilantro leaves
- 1/2 lime, juiced Kosher salt and freshly ground black pepper
- In a small mixing bowl, combine the sour cream, cilantro, and lime juice together. Mix thoroughly; season with salt and pepper. Serve with empanadas.

COLOMBIAN EMPANADAS

- Heat the oil in a large skillet over moderate heat. Add the meat, onions, carrot and potato and saute until the meat is no longer pink and the vegetables are tender. Remove from the heat and stir in the tomato, cilantro, eggs, capers, salt and pepper.
- Preheat the oven to 450 degrees. Roll out the chilled pastry to 1/4 inch thick and cut out 3 inch diameter rounds (you should get about 40). Place 2 tablespoons of the filling on half of the rounds, and cover the filling with the remaining half of the rounds. Seal the edges with the tines of a fork. Place the filled empanadas on a baking sheet and bake for 8 to 10 minutes, or until lightly browned.
IMPOSSIBLE EMPANADAS RECIPE BY TASTY

- Boil ¾ cup of water. To this, add the raw coleslaw and seasoning. Stir frequently for 5 minutes or until reaching desired crunchiness. Once reached, turn off the pot.
- In a separate bowl, season the plant-based ground beef.
- In a pan on medium heat, saute the garlic, onion, peas, and corn and add the seasoned plant-based ground beef.
- Cook the meat for 10 mins, then combine the cooked coleslaw with the plant-based ground beef.
- To assemble, add a scoop of the plant-based beef and coleslaw mixture on an empanada disk.
- Press the empanada disk with an empanada presser or with a fork.
- Heat a pan with oil and fry the empanadas for 2 mins on each side.
- Serve warm.

ROYAL FISH EMPANADAS AND COCONUT RICE
I don't often find fish recipes that I like, but this one is easy to make, quick, tasty, and different. You can adjust the seasonings in the filling to suit your mood. These are small empanadas, so I usually double the recipe to feed me and three hungry boys. From What's Cooking.

Steps:
- Boil fish filets with a bit of salt until tender.
- In a saucepan sauté onion and garlic. Add fish and stir constantly. Fish should be tender enough so it falls easily apart.
- Add olives, tomatoes, parsley, and limejuice. Adjust seasoning to taste.
- Cook for 10 minutes and refrigerate.
- In the meantime, roll pastry dough out and cut circles with a cookie cutter or a round plastic container.
- When the filling is cool start making the empanadas.
- Pre-heat oven to 350°F (175°C)
- Brush some egg yolk in half of the edge of one of the circles with a pastry brush.
- Put a spoonful of filling in the middle of the circle and fold it in half; bringing it together the edge with egg yolk over the opposite edge.
- With a fork seal the empanada, brush some more egg yolk on top for coloring and sprinkle with coconut flakes.
- Place over greased cookie sheet.
- Repeat operation with the rest of the circles.
- Bake for 15-20 minutes or until the edges start to turn golden brown. Cool before serving.
- For the rice:.
- Fry rice in butter until it starts turning golden, add coconut water and corn with the liquid it comes inches Season to taste. Bring to a boil, reduce heat to low and cover. Cook for 15-20 minutes or until rice is tender and has absorbed the liquids.
