COFFEE-RUBBED PORK TENDERLOIN WITH GREEN BEANS
A robust rub adds major flavor to lean, quick-cooking pork tenderloin. The finely ground coffee lends a pleasant bitter note that is tempered by brown sugar and dried spices. The addition of green beans makes this a one-pan meal that can be on the table in no time at all.

Steps:
- Position an oven rack in the top third of the oven and preheat the broiler to high.
- Combine the coffee, brown sugar, 1 1/2 teaspoons salt, 1 teaspoon black pepper, garlic powder, crushed red pepper, cumin and paprika in a small bowl and mix well. Drizzle the pork tenderloin with 2 tablespoons olive oil and evenly sprinkle the rub all over, patting to adhere. Let marinate at room temperature for 30 minutes.
- Toss the green beans in a large bowl with 3 tablespoons olive oil, 1 teaspoon salt and 1/4 teaspoon black pepper until well coated.
- Put the pork in the center of a large cast-iron skillet or heavy ovenproof skillet and scatter the green beans around it. (The pork should be directly on the pan, not on top of the green beans.) Broil for 10 to 12 minutes, flipping the pork and tossing the green beans halfway through cooking. When ready, an instant-read thermometer inserted in the center of the pork should register 145 degrees F and the green beans should be tender and lightly charred.
- Allow the pork to rest for 10 minutes before slicing across the grain. Serve with the green beans.

- In a small bowl, combine oil, garlic, salt & RawSpiceBar's Dark Coffee & Chiles. Rub pork tenderloin with mixture, rolling the tenderloin until all of it is covered in the spices. Refrigerate and allow to marinate, at least 2-3 hours.
- When ready to cook, preheat oven to 375 degrees.
- Coat a cast iron skillet with the canola oil, and bring to medium-high heat.
- Place tenderloin on pan. Sear for about 3-4 minutes, and turn over. Sear again for 3-4 minutes. Continue to sear all over, and once you have made your final "flip" of the tenderloin, place skillet in oven on middle rack. Bake for 25-30 minutes, or until a thermometer inserted into the center reads 150 degrees. Tent with foil and allow to rest for 8-10 minutes, slice and serve. Enjoy!

- Position a rack about 3-inches from the broiler and preheat. Line a broiler pan with foil. If there is sliver skin on the tenderloin, trim it off with a knife. Rub or brush the tenderloin with oil. Mix the chili powder with the salt and then sprinkle the spices all over the tenderloins and rub in well with your hands. Lay the tenderloin on the prepared pan, tucking the thin narrow tip of the tenderloin under so the meat is the same general thickness all the way down.
- Broil the tenderloin until golden brown on 1 side, about 5 minutes. Turn and continue to cook on the other side, until brown about 5 to 7 minutes more. Remove from the broiler, tent loosely with foil and set aside to finish cooking. Let rest for 5 minutes. Slice and serve with creamed corn.
- Shear the corn kernels from the cobs with a knife. Transfer the kernels to a bowl. Working over a bowl, run the knife along the cobs to press out the milky liquid. Discard the cobs. Slice the scallions, both white and a couple inches of the green into thin rounds. Separate the scallion whites and greens.
- Melt the butter in a medium skillet over medium-high heat. Add the scallion whites and cook until softened, about 1 to 2 minutes. Add the corn, water, and salt, bring to a simmer, cover and cook until tender, about 2 minutes. Add the cream, bring to a boil, and cook uncovered until slightly thickened, about 1 minute more. Stir in the scallion greens and tomatoes, season with black pepper and serve.

I got this recipe from a BJ's magazine. I have used the recipe on a beef roast (just be sure to adjust your cooking time and temp to 350). It can be made using decaff coffee.

- Let beef sit on counter 1 hour before roasting.
- Preheat oven to 500.
- Cut slits in beef and insert 2 cloves of garlic. Fold over thin end of meat and tie with string.
- In a bowl, combine ground coffee beans, sugar, chili powder, sage, garlic powder onion, powder,and cayenne.
- Rub meat generously with 1/2 of rub and sit for 15 minutes. Repeat process.
- Place meat on rack in roasting pan, put onions and remaining garlic around meat. Do not cover.
- Turn oven down to 400. Roast for 30 to 40 minutes or internal temp is 130 rare; 145 medium.
- Remove from oven and let rest 10 minutes before slicing.
- In medium saucepan combine broth, Worcestershire sauce, coffee crystals, garlic powder, and seasoned salt and bring to a boil.
- Reduce heat and simmer.
- Dissolve cornstarch in water and whisk into broth mixture. Cook til thickened.
- Whisk in butter 1 chunk at a time. Season with salt and pepper.

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine brown sugar, espresso powder, salt, 2 teaspoons honey powder, garlic powder, smoked paprika, sweet paprika, black pepper, onion powder, cocoa powder, and ground chipotle in a bowl. Mix thoroughly and transfer 1 tablespoon of the rub into a small bowl.
- Place pork tenderloin on a work surface and trim off any silver skin. Pat dry with paper towels. Sprinkle the larger portion of coffee spice rub all over the tenderloin, patting it on with your fingertips. Drizzle 1 tablespoon olive oil on top and rub it in. Let rest at room temperature for 10 minutes.
- Heat 1 tablespoon olive oil and butter in a large, oven-proof skillet over medium-high heat. Add pork; cook until browned on all sides, about 8 minutes.
