Steps:

  • In a large bowl, beat the eggs, cream, butter, coffee granules and vanilla until blended. Combine the flour, sugar, baking powder and salt; gradually add to butter mixture. Stir in the almonds, walnuts and chocolate chips (batter will be stiff)., Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until lightly browned. Cool on a wire rack. Cut into bars. Dust with confectioners' sugar.

My mother gave me this recipe a long time ago. She has been making it forever. I believe she told me she got it off the back of a coffee jar. :) I usually double it and put in 9x9 to make thicker bars (longer cooking time so be sure to check it).

Coffee Nut Bars image

Steps:

  • Dissolve coffee in hot water; set aside. Put butter and sugars in mixing bowl and combine. Stir in egg and vanilla.
  • Sift in flour, baking powder, salt, and baking soda alternately with coffee.
  • Spread evenly into 8x8 pan. Bake at 350 for 25-30 minutes or until done.
  • Cool in pan then dust with powdered sugar. (I like to cover my pans not long after coming out of oven to keep the moisture in for chewiness). :).

Sweet and Salty Double Nut Toffee Brownie Bars image

Steps:

  • Preheat oven to 350 degrees F. Line an 8-inch square metal cake pan with parchment.
  • In large bowl, whisk together 4 tablespoons melted butter and the melted chocolate. Blend in granulated sugar, 1/4 cup brown sugar, and vanilla. Whisk in egg. Then stir in flour. Spread in pan and bake for 15 minutes, remove and leave oven on.
  • Heat 1/2 cup butter and 3/4 cup of the brown sugar in a medium saucepan over medium-high heat. Boil for 2 minutes. Pour over brownie base and bake 7 minutes more. Remove from oven and sprinkle with milk chocolate, let sit 5 minutes, and spread to cover the top. Dust with ground almonds and then pecans. Sprinkle with salt. Press down pecans. Cool, then freeze 30 minutes before cutting. Serve at room temperature.

My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
  • Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 13x9-inch baking dish.
  • Beat shortening and brown sugar with an electric mixer in a large bowl until smooth. Blend egg into the shortening mixture. Add hot coffee and stir.
  • Sift flour, baking powder, cinnamon, baking soda, and salt together in a separate bowl; stir into the shortening mixture. Fold raisins and chopped nuts into the batter; spread into the prepared baking dish.

Coffee Nut Bars image

Steps:

  • Preheat oven to 375°F.
  • Spray a 9" square non-stick baking pan with cooking spray (or line a regular 9" square pan with foil and spray with cooking spray).
  • Mix the flour and 1/4 cup sugar until well combined and lump-free, add 1/2 cup melted butter and blend.
  • Press flour mixture firmly into the bottom of the pan.
  • Bake for 15 to 20 minutes until lightly browned, cool slightly on a wire rack.
  • Mix the egg and the instant coffee, add the brown sugar, corn syrup, butter and vanilla and stir until well blended.
  • Mix in the nuts, then spread evenly over the warm crust.
  • Bake for 20 to 25 minutes until the topping is firm around the edges and slightly soft in the middle.

If you compare these chocolate energy bars to similar fruit/nut bars sold at the store, I think they taste better, are nutritionally superior, and probably cheaper to make at home. Chef John's Chocolate Energy Bars image

Steps:

  • Place cashews, almonds, coconut, dates, cocoa, coconut oil, vanilla, cold coffee, cayenne and salt in the bowl of a food processor. Pulse on and off to start. Process about 1 minute; check to ensure mixture is sticky and moist enough to stick together. Add more coffee if needed. Continue to process until mixture becomes a chunky mass.
  • Line a baking pan with plastic wrap. Scoop mixture into pan. Press down with a spatula until mixture is even. Place a layer of plastic wrap on the surface and smooth again with your hands.
  • Refrigerate until cold and firm, 2 or 3 hours.
  • Remove from the pan and unwrap. Cut into bars of your preferred size. Store in a zip top back in the refrigerator.
