COMPANY'S COMING CARROT PUFF BAKE
Serve this along side of a pork or beef roast or turkey dinner, your guests will rave! if you are making this for a large gathering then make two separate recipes in two baking dishes -- this is also a great way to get kids to eat their veggies :)

Steps:
- Set oven to 350 degrees.
- Butter a 2-quart baking dish.
- Cook the carrots in a saucepan until fork-tender, about 15 minutes drain VERY well (you might even want to pat dry with a paper towel) cool slightly.
- Place the cooled carrot in a food processor and process until smooth.
- Add in all remaining ingredients; pulse to combine.
- Transfer to baking dish.
- Bake for about 40 minutes or until puffed and set.

Steps:
- Cook/steam sliced carrots until fork-tender; drain and keep warm.
- Preheat oven to 375.
- Lightly grease/spray a 2 1/2 qt casserole dish; set aside.
- In a mixing bowl, combine the melted butter, onion, cheese soup, milk, egg, cheese, crushed crackers, salt, pepper, tarragon and nutmeg; mix well.
- Gently fold in the hot cooked carrots to the mixture.
- Turn mixture into prepared casserole dish.
- Bake, uncovered at 375 for 25-30 minutes.

CARROT RICE BAKE
A nice side dish casserole. From some an old Better Homes and Gardens recipe card . I have not tried this one yet.

Steps:
- Combine carrot, rice, salt, and water in a saucepan.
- Bring to a boil.
- Reduce heat, simmer covered for 15 minutes or until rice is done.
- After rice is done, DO NOT drain mixture.
- Stir in 1 1/2 cups of the cheese, the milk, eggs, onion and pepper.
- Put mixture into a 10x6x2 inch baking dish (a 9x13 would work too).
- Bake at 350 uncovered for 20 to 25 minutes.
- Top with remaining cheese and return to oven.
- Bake an additional 2 minutes or more until cheese is melted.
- Cut into squares to serve.

CINNAMON CARROT BAKE
This is an easy recipe and so good! Serve the carrots at room temperature for a hot day, but they are delicious served hot also. You can also make this in the microwave on HIGH for about 10 minutes. The complete recipe can be doubled is desired.

- On stovetop or in a microwave oven, cook carrots until tender.
- Place in a 1-qt baking dish; set aside.
- In a small bowl, combine the next five ingredients; mix well.
- Pour over carrots.
- Combine bread crumbs and butter; sprinkle on top.
- Bake, uncovered, at 350 degrees F for 25-30 minutes.
- Sprinkle with cheese.
- Return to the oven for 2-3 minutes or until the cheese melts.
