Steps:
- Toasting and roasting. Preheat a broiler.
- In an ungreased skillet over medium heat, toast the chiles, stirring for 1 minute, until they are very aromatic (some will have slightly darkened spots on them). Transfer to a bowl, cover with hot water and rehydrate for 30 minutes.
- In the same skillet, roast the garlic, turning regularly, until soft and blotchy-dark in places, about 15 minutes. Cool and slip off the papery skin.
- Roast the tomatillos on a baking sheet 4 inches below a very hot broiler until soft, even blackened in spots, about 5 minutes on each side. Cool, then transfer the contents of the baking sheet (including any juices) to a blender or a food processor.
- Finishing the salsa: Drain the chiles and add to the tomatillos along with the garlic. Puree, then scrape into a serving dish. Stir in enough water to give a spoonable consistency, usually about 1/4 cup. Season with salt, usually 1 teaspoon, and the optional sugar. Refrigerated, the salsa keeps for several days.
ROASTED TOMATILLO AND GARLIC SALSA
Tomatillos, lots of garlic and spicy jalapenos charred under the broiler give this salsa a rich, earthy flavor. If you like your salsa very hot, added roasted Jamaican scotch bonnets instead of the jalapeno.

Steps:
- Preheat the oven's broiler. Arrange the whole cloves of garlic, tomatillos, and jalapenos on a baking sheet. Place under the broiler, and cook for a few minutes. Remove garlic cloves first, as soon as they are toasted, to avoid developing a bitter flavor. Continue to roast jalapenos and tomatillos until evenly charred, turning occasionally. Set aside to cool. Don't remove the charred parts of the tomatillos or the peppers. They add a really nice flavor.
- Place peppers and tomatillos in a blender with the garlic and cilantro. Add a little water to the mixture if necessary to facilitate blending. Season with salt and pepper to taste. Refrigerate until serving.

SALSA DE TOMATILLO
This is the 'salsa de tomatillo' that I grew up with. It can be used as a sauce for grilled chicken, fish or shrimp, as the basis for green chilaquiles (pour over tortilla chips, shredded cooked chicken and shredded Monterey Jack, then heat under the broiler), and as a dipping sauce for chips. Delicioso!

TOMATILLO SALSA
Dare to deviate from tomato salsa and try this tomatillo-based version for a deliciously addictive change of pace. It's fantastic on its own with tortilla chips or served as a condiment alongside a variety of meats. -Lori Kostecki, Wausau, Wisconsin

- After peeling and washing the tomatillos, transfer them to a pot and cover with water, To the pot also add the onion and serrano peppers without the stems. Bring up to a boil, reduce to a simmer and continue cooking for 7-10 minutes. Remove from heat.
- In a small skillet, add the dried chile de arbol and the peeled cloves of garlic. Heat to just below medium. Add 1 tsp of oil. After a few minutes the ingredients will begin to sizzle and become aromatic. Toss in the hot oil for 2-3 minutes, then remove from heat.
- Using a slotted spoon, transfer the tomatillos, serranos and onion to the blender. Add only the garlic at this time. Pour in 1/2 cup of the cooking water in. Add a big handful of freshly washed cilantro to the blender. Season to taste with salt. Blend on high until smooth. Now add the chile de arbol and pulse to blend. I like to see the red chile flakes in the salsa.
- Transfer the blended salsa to a sauce pan and heat to medium. When it comes up to a simmer, reduce heat slightly and continue cooking for 7-10 minutes. Cooking the salsa will cook out the natural pectin and will yield a smoother salsa when refrigerated.
