COOKIE BOUQUET COOKIES
I found this from someone else online, and fell in love with it. These are exactly like the cookies I have ordered from Cookie Bouquet. The lemon is what really does it. Make sure to use high-quality, super-fine granulated sugar, as this combined with the powdered sugar gives that melt-in-your-mouth feel. My husband and I enjoy decorating them together.

Steps:
- In a large bowl, cream together butter and sugars until smooth. Add lemon zest. Beat in eggs and vanilla. In another bowl, combine flour, baking powder and salt. Add to wet ingredients slowly. Cover and chill dough for at least one hour (or overnight).
- Preheat oven to 400 degrees F. Roll out dough on floured surface to 1/4 to 1/2 inch thickness. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
- Bake 6 to 8 minutes in preheated oven. Cool completely.

COOKIE BOUQUET
Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, mix the sugar cookie dough with the cherry extract and 1/2 to 1 cup flour to make a very firm cookie dough. Roll out the dough to 1/4 to 1/2-inch thick. It has to be very thick for the lollipop sticks to stay in once baked.
- Cut out flower shapes and insert lollipop sticks. You should get about 8 cookies, depending on the size of your cutter. Bake according to package directions (they will probably need a little longer as they will be MUCH thicker). Cool completely.
- Decorate with icings. Let the icing dry overnight.
- Place the foam in a basket or large bowl. Insert the cookies into the foam and decorate the top of the foam with Easter grass or tissue paper.
BUNNY CUT-OUT COOKIE BOUQUET
Steps:
- To make the cookies: In a large mixing bowl, combine the sugar cookie dough, bubblegum extract, and 1 1/2 cups flour. Divide the dough in half, form into balls, and cover with plastic wrap. Refrigerate for 1 hour.
- Remove the dough balls from the refrigerator and unwrap. On a lightly floured board, roll the dough out to 1/2-inch thickness. Cut out bunny-shaped cookies with the cookie cutter.
- Place the cookies on an ungreased cookie sheet. Carefully insert the wooden cookie sticks into the cookies, far enough to hold the cookie, but not so far as it comes out the other end. Place the cookie sheet in the refrigerator and chill for 1 hour.
- Preheat the oven to 375 degrees F.
- Bake the chilled cookies for 15 to 18 minutes, or until golden brown. Remove from the oven and cool on the cookie sheet for 5 minutes. Transfer to cooling racks. Allow cookies to cool completely before decorating.
- To decorate: Create the border icing by combining 1/2 pound confectioners¿ sugar with a drop of food coloring, then gradually adding enough water until the mixture is thick but still squeezable. With a piping bag, create a thin border around the perimeter of each cookie. Create the center icing by combining 1 pound confectioners¿ sugar with at least 1/2 cup of water, adding enough to create a thinner consistency. After the border icing has hardened, pipe the center icing onto the middle of the cookie to fill the surface within each cookie. Complete each cookie with a star-shaped dragee for the "eye" and 4 chocolate sprinkles for the "whiskers." Sprinkle generously with sanding sugar.
FROSTED COOKIE BOUQUET

- For the cookies, cream shortening and sugar in a bowl. Beat in egg, milk and vanilla. Combine flour, baking powder and salt; add to the creamed mixture and mix well., On a lightly floured surface, roll out the dough to 1/4-in. thickness. Cut out 16 shapes with cookie cutters dipped in flour (six flowers, six hearts, two baseball players or gingerbread men and two 2-1/4-in. rounds for the baseball). Place the cardboard templates for the baseball cap and glove onto the dough and cut around them with a sharp knife, making two caps and two gloves., Place five cookies each on two ungreased baking sheets. Place a wooden stick on top of each cookie, leaving 3 in. extending for the handle. Top each cookie with the same-shaped cutout. Press edges gently to seal cookies together., Bake at 375° for 8-10 minutes or until cookies are golden brown. Outline the glove and pipe eyes and hair on the player., Cut a pieces of florist's foam to fit inside the coffee mug. Push the foam into the mug to fit tightly. Sprinkle graham cracker crumbs over the foam. Insert baseball player, cap, glove and baseball cookie lollipops into foam. Tuck the blue tissue paper around the cookies.
