COOKIE BUTTER BRIOCHE STAR
Cookie butter is basically the best thing on this planet, and I am always looking for different ways to eat it. I like to use Biscoff® Cookie Butter. It has more of a caramel taste, where as other cookie butters have a more ginger taste.

Steps:
- Place bread flour, sugar, yeast, and salt in the bowl of a stand mixer. Mix with a fork. Add milk, egg yolks, and butter. Attach dough hook and knead until dough forms a ball and feels smooth and elastic, about 10 minutes.
- Pour vegetable oil into a large bowl. Add dough and roll around to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled, 1 to 2 hours.
- Transfer dough to a flat work surface. Knead gently to knock the air out. Form dough into a flat oblong shape, then roll into a log. Cut the dough into 4 equal pieces. Keep dough covered with a damp cloth while you work with 1 piece at a time.
- Dust work surface with a little flour. Use a rolling pin to roll out first piece of dough. Invert a round 8-inch pan or plate on top; trace the rim with a sharp knife to cut dough into an 8-inch circle.
- Line a baking sheet with parchment paper and slide the circle onto it. Warm cookie butter briefly in the microwave to make it easier to spread. Spread 1/3 of the cookie butter over the dough circle.
- Repeat with 2 more pieces of dough and remaining cookie butter. Roll out last piece of dough, cut into an 8-inch circle, and place on top. Invert the pan or plate over the stack and cut through all the layers to make a perfect circle.
- Invert a small drinking class in the center of the circle. Use a sharp knife to cut dough into quarters, from the base of the drinking glass to the outside edge. Cut quarters into eighths, then into sixteenths.
- Grab 2 slices and twist each one twice, in opposite directions. Repeat all the way around the circle. Pinch and seal all the ends. Cover with a damp cloth and let rise for 20 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Beat egg whites lightly and brush over dough.
- Bake in the preheated oven until golden brown, about 20 minutes. Cool briefly before serving.

EASTER BRIOCHE
A wonderful buttery bread. My mom made this at Easter with an egg in each loaf. It's not the traditional Italian Easter bread. She found this recipe in a James Beard cookbook and used it for years. Now I use it too, not just at Easter. If you've never tried a Brioche type bread, this is a good recipe to try....

Steps:
- Dissolve the yeast thoroughly in the warm water. In a medium bowl, mix in 1 cup of the flour. Stir till mixed well. Cover and let rise till double in size.
- Blend the remaining flour in a large bowl with salt and sugar. Beat three eggs and stir in to flour. Will be crumbly. Gradually add the cup of melted butter stirring constantly. Beat the remaining three eggs and add while continuing to stir. Finally, add the yeast/flour mixture blending until completely incorporated. Use your hands if necessary. The resulting dough will be sticky. Cover and let rise till doubled in size.
- Deflate and shape into two round loaves or braid (this is not easy as the dough is very soft). Place a raw egg in center and let rise on baking sheet for at least a half hour. Place in 375 degree preheated oven for 35 to 40 minutes till golden brown. You may brush the top with milk or egg yolk to glaze if desired.
- Prep time does not include rising time.

WORLD'S BEST BUTTER COOKIES
I tested 8 different butter cookie recipes, looking for the "perfect" butter cookie. It had to be buttery, a little crumbly (like shortbread), and not too sweet. This is the winner. I think these are the Worlds Best Butter Cookie, courtesy of Chef Alice Medrich.

Steps:
- Beat the butter, sugar, salt and vanilla together until smooth and creamy.
- Mix in the egg yolk until well incorporated, scraping down the sides of the bowl at least once.
- Add the flour and mix just until incorporated.
- Scrape onto a lightly floured board and knead a few times, just until the dough smooths out.
- Turn onto a sheet of plastic wrap and roll into a log, wrap up and refrigerate for several hours or freeze.
- Before baking, preheat the oven to 325°F.
- Line your baking sheets with parchment.
- Slice the dough into slices about 1/8" thick and place them on the sheets about an inch apart (they won't be spreading very much, but they need air room around each cookie).
- Bake until JUST beginning to turn golden around the edges, about 16-18 minutes.
- Note: you can do many things with these cookies.
- You could roll the dough out and cut shapes.
- You could slice them even thinner and sandwich them with chocolate or jam or lemon curd.
- You could make them and then dip them half into chocolate.
- You could just make them and eat them, which is my favorite.
- Whatever you do, they will be delicious.
