COOKING MAMA'S QUICHE

I have been making this quiche for the past 20 years. You will love it too, it takes a little time to prepare, but it is so worth it! Hope you enjoy it just as much as my family does.

Steps:

  • Put all ingredients into a large bowl, mix well.
  • Pour into chilled pie crust and bake in a preheated 350 degree oven for 1 hour, or until set.
  • Serve hot.

1 pillsbury premade pie crust
1 (10 ounce) package of chopped spinach, dranied and squeezed of any water
1 bunch green onion, diced
1 (8 ounce) package sliced mushrooms
1 cup shredded swiss cheese
1 cup shredded cheddar cheese
8 pieces bacon, cooked crispy and crumbled
1/2 cup mayonnaise
1/2 cup milk
3 eggs, slightly beaten

  • I like to make sure my pie dough is prepared before I begin the quiche. Make pie dough the night before because it needs to chill in the refrigerator for at least 2 hours before rolling out and blind baking (next step).
  • Preheat oven to 375°F (190°C). Partially blind bake your pie crust. Follow blind baking instructions through step 9 in your 9-inch pie dish. Step 4 is optional, though that step guarantees thick pie crust edges. Crust can still be warm when you pour in the filling. (You can partially pre-bake the crust up to 3 days ahead of time. Cover cooled crust tightly and refrigerate until ready to fill.)
  • In a large bowl with a handheld or stand mixer fitted with a whisk attachment, beat the eggs, whole milk, heavy cream, salt, and pepper together on high speed until completely combined, about 1 minute. Whisk in add-ins.

  • Preheat oven to 375 degrees. Fit a 9-inch-deep pie plate with prepared pie crust. Flute the edges and dock the bottom of the crust; set aside.
  • In a large skillet over medium heat melt the butter. Add onion and garlic, cook until just tender about 3 minutes. Add red pepper cook an additional 3 minutes or until the pepper is just tender.
  • Add spinach, olives, oregano, and parsley. Cook until the spinach is wilted about 2-3 minutes more. Remove from heat.
  • Using paper towels, squeeze out as much oil from the tomatoes as possible and chop. Gently stir in tomatoes and feta cheese into the spinach mixture. Spoon the mixture evenly into the prepared pie crust; set aside.
