COPYCAT SUBWAY® ORCHARD CHICKEN SALAD SUB
I found this recipe when I was looking for this recipe or one close to it. I tried this at Subway and really liked it. Subway always uses light Mayo. In this recipe the salt and pepper are optional. Use more or less mayo to suit your own taste and the same with the fruits. I like to add a few more fruits. There is no cook time unless you are cooking your chicken for this recipe. I use left over or canned.

Steps:
- In a medium bowl toss apples, celery, raisins, cranberries and chicken.
- Season with celery salt, salt and pepper to taste and mix.
- Stir in mayonnaise.
- Slice a 6 inch roll in half.
- Add 2 heaping tablespoons chicken salad to bottom slice of roll and spread.
- Add your toppings.

- Heat a grill pan or large skillet. Drizzle chicken with oil, to cover,and season with grill seasoning blend or salt and pepper. Grill or pan-fry 6 minutes on each side.
- Heat broiler, lightly toast rolls on cookie sheet and remove.
- Heat a large skillet over medium high heat. Add 2 tablespoons oil, garlic, crushed red pepper flakes, mushrooms, peppers, onions and oregano. Saute veggies and season with salt and pepper. Cook 5 minutes, then deglaze the pan with wine or stock. Pick up tasty bits off the bottom of the pan with a wooden spoon or heat safe spatula. Add tomatoes and parsley to the sauce. Slice chicken breasts on an angle and set into sauce. Pile chicken and veggies into sub rolls and cover with sliced provolone. Melt cheese under hot broiler. Serve.

- In a medium bowl toss chopped apples with squeeze of lemon juice.
- Add celery, raisins, cranberries and chicken. Season with salt and pepper to taste and mix. Fold in mayonnaise.
- Split a whole wheat sub roll horizonally without cutting all the way through the roll. Add about 1/3-1/2 cup shredded lettuce. Add veggies of choice, and finish with desire amount of chicken salad. You will have enough chicken salad for two 6 inch subs.

- Place the 1-inch piece of ginger and star anise in a pot of water over medium-heat and bring to a boil. Add chicken to the water. Lower heat to medium-low; simmer until chicken is no longer pink the middle, 10 to 12 minutes. Remove to a plate to cool. Once cool to the touch, dice into bite-sized pieces.
- Make a dressing by whisking together the mayonnaise, salt, pepper, paprika, and honey; set aside.
- Combine the diced chicken, celery, apple, onion, raisins, walnuts and 2 teaspoons minced ginger in a bowl. Drizzle dressing into the chicken mixture; stir until pieces are evenly coated. Cover and refrigerate overnight.
