Steps:
- Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, stir flour, sugar, milk, baking powder and salt until well blended. Stir in melted butter. Pour into baking dish.
- Pour frozen blueberries over batter; sprinkle with ginger.
- Bake uncovered 1 hour to 1 hour 5 minutes or until edges are golden brown and center is set. Let stand 15 minutes before serving. Serve warm.

COUNTRY BLUEBERRY PIE
Steps:
- Filling: Combine sugar, cornstarch, cinnamon and water. Add to a saucepan and heat rapidly until thickened. Set aside to cool as you prepare the pastry. Once cooled add the berries and lemon juice.
- Preheat oven to 425 degrees F.
- Combine flour, sugar and salt. Cut in shortening. Whisk together egg, water and vinegar. Add to flour mixture tossing lightly with a fork. Turn out onto a lightly floured cutting board and using your hands combine dough. Separate into 2 single crusts. Line the bottom of a pie plate with 1 of the crusts.
- Pour filling into dough lined pie pan, and sprinkle the lemon juice over the filling. Adjust top crust, cut vents and flute rim. Sprinkle top lightly with sugar. Place pie onto a baking sheet and into the oven for 20 minutes. Reduce heat to 350 degrees F and bake for an additional 20 to 25 minutes. Allow to cool, cut and enjoy!

This recipe came from Eating Well. I would make one change however and only use half the amount of blueberries suggested. I have also made this with frozen peaches and it was really good too. It is really easy, versatile and healthy! Can't beat it!

- Put berries in greased 8" square pan.
- Dribble juice over, and sprinkle with cinnamon Cream sugar and butter Add dry ingredients and milk.
- Mix til smooth.
- Spread over berries.
- Combine sugar and cornstarch.
- Sprinkle over batter.
- Pour boiling water carefully over.
- Bake 45-60 minutes at 350° till browned.
- Can be halved in a loaf pan.
