COUNTRY BRUNCH SKILLET
If it's not a dessert, it's a breakfast item that we love. I found this recipe some time ago and we've been making it every weekend.

Steps:
- 1. In a large skillet over medium heat, cook bacon until crisp. Remove bacon; crumble and set aside. Drain, reserving 2 tablespoons of drippings. Add potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for 2 minutes. Cover and cook, stirring occasionally, until potatoes are browned and tender, about 15 minutes. Make six wells in the potato mixture; break one egg into each well. Cover and cook on low heat for 8-10 minutes or until eggs are completely set. Sprinkle with cheese and bacon.

- In a heavy 12-in. cast-iron or other ovenproof skillet, cook sausages over medium-high heat, turning occasionally, about 10 minutes; drain. Add apple wedges. Sprinkle with brown sugar, lemon juice and salt. Cover and cook over medium heat for 10-15 minutes or until apples are tender and sausages are fully cooked.

Steps:
- Trim crusts from bread; cut slices in half.
- Grease a 13 x 9 x 2 inches baking pan (or slightly larger) and layer as follows: Cover bottom of pan with one-half of bread, one-half of ham and one-half of each of the cheeses.
- Repeat layers.
- Combine eggs, milk, and seasonings.
- Pour over layers; refrigerate overnight.
- Remove from refrigerator 30 minutes before baking.
- Combine topping ingredients; sprinkle over casserole.
- Bake 375 for 45-55 minutes (cover loosely with foil to prevent top from over browning).
- Let stand 10-15 minutes before cutting into squares.

- Heat 2-3 tablespoons olive oil in a 10-inch cast iron skillet over medium heat. Add potatoes in a single layer. Cover with a lid and cook for 10-12 minutes, turning once ¾ of the way through, until cooked and slightly crispy. Season with salt and pepper to taste. Transfer to a plate and set aside.
- Add another 1-2 tablespoons olive oil to the skillet on medium high heat. Cook the onions, bell peppers, and diced ham, turning occasionally, until the bell peppers are tender and slightly charred and the ham is cooked through and golden brown. Season with salt and pepper to taste.
- Add the prepared potatoes back into the skillet, and combine everything. Top with shredded cheese. Place in the preheated oven for 2-4 minutes, or until cheese is nicely melted.

- In a skillet over medium-high heat, cook the bacon until crispy. Reserve half of the oil in the skillet and discard or save the rest. Transfer the bacon to a paper towel lined plate.
- To the skillet with the bacon grease, add the potatoes and peppers. Cook until potatoes are fork tender, about 15 minutes. Season with salt and pepper to taste.
- Fry the eggs in the now empty skillet, just until the whites are set. Spoon the potato, pepper, and bacon mixture around the eggs, until heated through. Sprinkle on the cheese and allow to melt.
