COUNTRY BRUNCH SKILLET

If it's not a dessert, it's a breakfast item that we love. I found this recipe some time ago and we've been making it every weekend.

Country Brunch Skillet image

Steps:

  • 1. In a large skillet over medium heat, cook bacon until crisp. Remove bacon; crumble and set aside. Drain, reserving 2 tablespoons of drippings. Add potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for 2 minutes. Cover and cook, stirring occasionally, until potatoes are browned and tender, about 15 minutes. Make six wells in the potato mixture; break one egg into each well. Cover and cook on low heat for 8-10 minutes or until eggs are completely set. Sprinkle with cheese and bacon.

6 slice bacon, cooked or half a roll of sausage cooked
6 c frozen potatoes, cubed
3/4 c green pepper
1/2 c chopped onion
1 tsp salt
1/4 tsp pepper
6 eggs
1/2 c shredded cheddar cheese

With its great combination of flavors and ease of preparation, this is one of my favorite dishes to make when we have overnight guests. Serve it with scrambled eggs for a complete meal...with little fuss!

Steps:

  • In a heavy 12-in. cast-iron or other ovenproof skillet, cook sausages over medium-high heat, turning occasionally, about 10 minutes; drain. Add apple wedges. Sprinkle with brown sugar, lemon juice and salt. Cover and cook over medium heat for 10-15 minutes or until apples are tender and sausages are fully cooked.

Steps:

  • Trim crusts from bread; cut slices in half.
  • Grease a 13 x 9 x 2 inches baking pan (or slightly larger) and layer as follows: Cover bottom of pan with one-half of bread, one-half of ham and one-half of each of the cheeses.
  • Repeat layers.
  • Combine eggs, milk, and seasonings.
  • Pour over layers; refrigerate overnight.
  • Remove from refrigerator 30 minutes before baking.
  • Combine topping ingredients; sprinkle over casserole.
  • Bake 375 for 45-55 minutes (cover loosely with foil to prevent top from over browning).
  • Let stand 10-15 minutes before cutting into squares.

Cover with a lid and cook for 10-12 minutes, turning once ¾ of the way through, until cooked and slightly crispy. Season with salt and pepper to taste. Transfer to a plate and set aside.
  • Add another 1-2 tablespoons olive oil to the skillet on medium high heat. Cook the onions, bell peppers, and diced ham, turning occasionally, until the bell peppers are tender and slightly charred and the ham is cooked through and golden brown. Season with salt and pepper to taste.
  • Add the prepared potatoes back into the skillet, and combine everything. Top with shredded cheese. Place in the preheated oven for 2-4 minutes, or until cheese is nicely melted.
