COUNTRY STYLE POTATOES
While a potato recipe is usually a side dish, this one is so packed full it is a meal in and of itself. For an added twist, fry an egg and put on top.

Steps:
- 1. Peel and cube potatoes
- 2. Cook bacon and sausage then set aside.
- 3. In a skillet, add olive oil and butter over medium heat. Add in onions and peppers. Cook about 5 minutes stirring often.
- 4. Add potatoes and spices, cover and cook for about 5 minutes stirring often.
- 5. Add bacon (broken into pieces) and sausage (broken into pieces) cover and cook for 5 minutes. Check potatoes and remove when cooked.
- 6. Salt and pepper to taste.

Serve this take on potato salad with pork chops, fried chicken, or flank steak.

- In a medium pot, bring potatoes to a boil over high in salted water and cook until tender when pierced with a knife, about 10 minutes. Meanwhile, in a large bowl, whisk together buttermilk, sour cream or Greek yogurt, and mayonnaise. Stir in fresh herbs, thyme, and garlic; season with salt and pepper. Drain potatoes and add to dressing. Toss to combine and serve immediately.

Steps:
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- In a large bowl, combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled.

- Preheat oven to 350F. In a large pot, add the cubed potatoes and add enough cold water to cover *can use stock in lieu of water. Cook until fork tender. DO NOT DRAIN!
- Mash the potatoes in with the hot liquid. To the pot add in the bread cubes, onion, celery, parsley, and melted butter. Mix until well combined.
- Next, add in the eggs and milk. Stir to combine. Keep stirring as you do not want it to cook/curdle the eggs. Add in the salt and pepper. The mixture should be soupy. If it is not, add more milk til soupy.
- Place in a large buttered casserole or roaster pan. Cover and bake for ~90 minutes, stirring occasionally. If the filling begins to dry out, add more milk or stock.
