Steps:
- Bring the stock to a boil with the green onion and pepper.
- Add the rice; turn down to a simmer and cover; cook for 20 minutes.
- NOTE: If you want drier rice, remove the cover at 20 minutes and heat just a minute or so longer.
- VARIATIONS: Rice made with fish stock can be served with fish, beef-stock rich with beef.
- If you begin adding more vegetables, you will end up with a jambalaya instead of a side course of Country Rice.

COUNTRY CHICKEN CASSEROLE

Steps:
- Stir the soups, milk, thyme, black pepper, vegetables and chicken in a 3-quart shallow baking dish. Top with the stuffing.
- Bake at 400 degrees F for 25 minutes or until the stuffing is golden brown.
- *Use a combination of cut green beans and sliced carrots.
COUNTRY WILD RICE WITH SAUSAGE
Steps:
- Heat 2 tablespoons oil in a large saucepot over medium-high heat. Add the rice and cook, toasting until the rice begins to smell nutty, about 5 minutes. Add the chicken stock along with some salt and bring it to a boil, then reduce to a simmer and cover. Simmer until the rice is tender and has absorbed all the liquid, about 25 minutes
- Meanwhile, heat the remaining tablespoon oil along with the butter in a large skillet over medium-high heat. Add the onion, pepper and a generous pinch of salt and cook until just tender and beginning to brown, about 5 minutes. Add the garlic, sausage, thyme and sage, and cook, breaking up with a wooden spoon until browned and cooked through, 4 to 5 minutes more.
- When the rice is cooked and liquid is absorbed, turn off the heat, remove the lid and add the sausage and vegetables. Fluff and stir gently with a fork to combine. Add the rice to a serving dish and sprinkle with the chives before serving hot.
COUNTRY CHICKEN AND RICE SOUP

- Heat rice according to package directions. In medium microwave-safe bowl, combine chicken, broth and vegetables. Microwave on high for 5 minutes. Stir in rice.

COUNTRY STYLE NOODLES

- Heat up vegetable oil in a wok until it is shimmering. Throw in fresh garlic and crushed Thai chile and cook until golden brown, about 30 seconds. Throw in the meat and cook, stirring continuously, until it is cooked medium-well, about 1 minute. Add the pickled garlic and then the egg; while the egg is still runny, add the noodles. Add the fish sauce followed by the palm sugar and cook, stirring, until the noodles are soft. Add the pickled garlic juice and cook, stirring, about 30 seconds maximum. Add green onion, allowing to cook for no more than 15 seconds. Remove from wok and place on a serving dish. Garnish with lime.

- In a heavy saucepan combine the milk, rice, sugar, nutmeg, lemon zest and salt. Bring to a boil, stirring occasionally.
- Reduce heat to low and simmer , uncovered, until rice is tender and mixture begins to thicken, about 20 - 25 minutes, skimming any foam that may come to the surface. Stir in the egg and cook 2 minutes longer.
- Remove from heat and stir in bourbon and vanilla extract. Chill before serving.
- Sprinkle with Cinnamon Sugar before serving.
- CINNAMON SUGAR: Combine cinnamon and sugar and store in a tightly covered bowl.

- If using fresh tomatoes, drain them in a sieve or colander set over a bowl to catch their juices; set juices aside.
- In a large Dutch oven, cook the bacon over medium heat until it is beginning to crisp; with a slotted spoon, transfer the bacon to paper towels to drain.
- Return Dutch oven of drippings to the stove; add the onion, bell pepper, and celery; saute until softened, about 10 minutes (add a little oil if the bacon fat seems insufficient).
- Add the jalapeno, poblano, tomatoes, bay leaves, and thyme to the pot; season with salt and pepper to taste; simmer for about 10 minutes, until the peppers have softened.
- Meanwhile, in a medium saucepan, combine the broth with a scant 1/4 cup of the reserved tomato juices (discard any remaining juice) and add salt to taste.
- Bring to a simmer; add the rice, return to a simmer, and stir a few times.
- Decrease heat to the lowest setting, cover, and cook until the rice is tender, about 16 minutes.
- Add the rice to the vegetable mixture, along with the bacon; taste for seasonings.
- Stir in the scallions, basil, and a big squeeze of lemon; serve immediately.

- Preheat oven to 350 degrees.
- Combine rice, celery, diced red pepper, onions, butter, parsley and seasonings.
- Mix lightly. Spoon mixture in greased 3 quart shallow baking dish, top with chicken breast.
- Combine soup, Miracle Whip and milk, mixing until blended.
- Pour over chicken and bake 45 minute
- Add carrots, top with shredded cheddar and bake 15 minutes longer or until chicken is tender.

COUNTRY PIE
This is my old roommates recipe - we used to fix this all the time. It's a tasty, one dish dinner. The "crust" is a "meatloaf" mixture.

- Crust: Combine ground beef, 1/2 a can of tomato sauce, bread crumbs, onion, green pepper & spices.
- Pat mixture down & up sides of a 9 inch pie plate (I use a deep dish).
- Set aside.
- Filling: Combine rice, all the remaining tomato sauce (1 1/2 cans), 1 cup water & 1/2 cup of cheese.
- Pour on top of crust.
- Cover with foil and bake at 350 for 25 minutes.
- Sprinkle with rest of cheese & bake 10 -15 more minutes or.
- until cheese is melted.
