Buttermilk Cheesecake 1972 image

Steps:

  • Crust:.
  • Melt butter and add all other ingredients to make a crumb mixture.
  • Butter a 9 inch spring pan and pat in the crumbs forming a shell.
  • Bake for ten minutes at 350 degrees.
  • Remove from oven and set aside.
  • Filling:.
  • Cream the butter with the cream cheese and zest of lemon.
  • Beat well until nice and smooth.
  • Add the buttermilk and vanilla, again beat well and smooth.
  • Add eggs one at a time, incorporating each on well, but do not overbeat.
  • Again will specify do not over beat.
  • Pour into the prebaked crust and set into oven.
  • Bake at 350 for 25 minutes.
  • Bake then reducing heat to 300 and bake 25 more minutes.
  • Reduce heat down again to 200 degrees and finish baking until just slightly jiggly in centre, this is about another 20 to 25 minutes.
  • Can also place a small pot of water in the back corner of oven, or place in a water bath if desired.
  • I usually dry bake all my cheesecakes, but this recipe allows for all types of baking.
  • Remove and let cool to room temp on a rack for at least three hours.
  • Then refrigerate and chill.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Beat eggs in a stand mixer fitted with the whisk attachment on high speed until thick and lemon-colored, about 3 minutes. Gradually add sugar, beating until mixture is thick, about 5 minutes. Fold flour, baking powder, and salt into the batter by hand.
  • Microwave milk in a small microwave-safe bowl until it begins to bubble, about 1 minute. Stir in butter until melted. Add vanilla extract.
  • Pour milk mixture into the batter; blend on low speed until well-combined and smooth. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 25 to 30 minutes.

Steps:

  • Preheat oven to 325°. Let eggs stand at room temperature for 30 minutes. Sift flour and salt; set aside. , In a large bowl, beat yolks until slightly thickened. Gradually add 1 cup sugar, beating until thick and lemon-colored. Blend in water and vanilla. Add dry ingredients to yolk mixture; mix well. , In another bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually beat in remaining sugar, about 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Fold a fourth of egg whites into the batter, then fold in remaining whites., Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake on the lowest oven rack until cake springs back when lightly touched, 55-60 minutes. Immediately invert the pan; cool completely. , Run a knife around side and center tube of pan. Remove cake to a serving plate. If desired, serve with ice cream topping.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 7-inch cake pans and line with parchment paper.
  • Sift self-rising flour into a bowl; add sugar, margarine, and 1/2 teaspoon vanilla extract. Crack in eggs. Beat with a wooden spoon or an electric mixer until pale and fluffy. Divide batter between the cake pans; smooth the tops with the back of a spoon.

Easy Sponge Cake image

Steps:

  • Preheat oven to 180C (350F).
  • Grease and flour two round 20 cm (8") cake tins using 1 teaspoon castor sugar and 1 teaspoon flour mixed together.
  • Sift dry ingredients together 3 times.
  • Separate egg whites from yolks carefully making sure no yolk is mixed into the white.
  • Beat whites with a pinch of salt until stiff peaks form.
  • Gradually add sugar and yolks one at a time. Add vanilla.
  • Gently fold in the dry ingredients until just barely mixed through.
  • Pour evenly into the 2 tins.
  • Bake for 20-25 minutes.
  • Turn out to cool on racks immediately.
  • When cool, sandwich with jam and whipped cream. Ice and decorate top.
