Steps:

  • in a 3 qt saucepan combine beans, potatoes and onions. add enough water to cover. bring to a full boil, and cook over medium heat stirring occasionally until vegetables are crispy tender (15 to 20 minutes).
  • drain and return to pan, add remaining ingredients (except parsley).
  • cook over medium heat stirring occasionally until heated through (10 to 12 minutes).
  • stir in parsley and serve.

1/2 lb fresh green beans, trimmed
4 small red potatoes, quartered
2 small onions, quartered
3 tablespoons butter or 3 tablespoons margarine
8 fresh mushrooms, halved
1 medium tomatoes, cut into 1/2inch pieces
1 teaspoon basil leaves
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon thyme leaves
2 tablespoons tomato paste
1/2 teaspoon fresh garlic, minced
1/4 cup fresh parsley, chopped

Chicken and Sweet Potato Simmer image

Steps:

  • Peel sweet potatoes. Cut potatoes and chicken into 1-inch (2.5 cm) cubes. Set sweet potatoes aside. In large nonstick skillet, heat 1 tbsp (15 mL) of the oil over medium-high heat; brown chicken, about 10 minutes. Transfer to plate.
  • Drain fat from pan; heat remaining oil over medium heat. Fry onion, green pepper, garlic, ginger, chili powder, cumin, salt and pepper, stirring often, until onion is softened, 4 minutes.
  • Add sweet potatoes and chicken stock; bring to boil. Return chicken and any juices to pan; cover and simmer until juices run clear when chicken is pierced and sweet potatoes are tender, about 10 minutes. Uncover and cook over high heat until sauce is thickened, about 5 minutes. Sprinkle with parsley.
