Steps:

  • Preheat a grill to medium heat. You can also make this in a skillet on the stovetop.
  • For each quesadilla, brush a tortilla with olive oil. Place the tortilla on the grill or skillet and top with the desired fillings: chicken, cheese, jalapenos, bell peppers, onions or beans. Top with a second tortilla and brush the top with oil. Grill until the bottom tortilla is starting to brown, about 2 minutes. Flip and grill, covering the grill or the skillet if the cheese is not melting, until the other tortilla is beginning to brown, an additional 2 minutes.
  • Cut each quesadilla into quarters and garnish with cilantro, lime and sour cream if using.

Eight 8-inch tortillas (I'm using flour)
2 tablespoons oil (I'm using olive)
2 cups chopped or shredded roasted meat (I'm using yesterday's leftover chicken)
1 cup grated cheese (I'm using Cheddar)
2 jalapenos, sliced, optional
2 bell peppers, roasted and thinly sliced (I'm using red bell peppers)
1 cup sliced onion (I'm using red)
One 15-ounce can beans, rinsed (I'm using black)
Fresh cilantro, for topping, if you have it
Sour cream and lime, for serving, optional

Steps:

  • For the quesadilla: Prepare a grill for medium-high heat.
  • Sprinkle the chicken with salt and pepper. Grill until cooked through, 12 to 15 minutes, depending on size. Let cool and then shred the chicken into a bowl.
  • Heat the grapeseed oil in a saute pan over medium-high heat. Add the onions and peppers, and cook until caramelized, 8 minutes. Add to the shredded chicken and season with salt and pepper.
  • Lay out the tortillas on a work surface. To one, add the Monterey Jack, followed by the chicken mixture. Top with the Cheddar and cover with the second tortilla.
  • For the salsa: In a bowl, mix together the onions, tomatoes, lime juice and cilantro. Season with salt and pepper.
  • Heat up the butter in a skillet. Add the pre-made quesadilla and pan-fry until golden. Flip and cook on the reverse side until golden and the cheese is melted. Remove from the pan, cut into 4 wedges and garnish with salsa and sour cream.

3 ounces boneless, skinless chicken breast
Kosher salt and freshly ground black pepper
1/3 onion, sliced
1/3 green bell pepper, sliced
1 tablespoon grapeseed oil
Two 6-inch flour tortillas
2 ounces shredded Monterey Jack
2 ounces shredded Cheddar
1/3 onion, diced
1/3 tomato, diced
1/2 lime, juiced
1/3 bunch fresh cilantro, chopped
Kosher salt and freshly ground black pepper
2 teaspoons butter
1 ounce sour cream

CRISPY-EDGED QUESADILLA

This straightforward quesadilla has an unexpected twist: a border of salty, crispy cheese surrounding the tortilla. Achieving it couldn't be easier; just press down on the folded tortilla as it heats up in the pan so the cheese spills out and turns golden. A nonstick pan is key here, otherwise the melted cheese will glue itself onto the cooking surface. Medium heat is just the right temperature for a quesadilla: It's hot enough to crisp up the cheese but low enough to prevent the cheese from burning.

Steps:

  • Place a medium nonstick skillet over medium heat, then add the oil. Let oil heat up for 20 seconds, swirling the pan around so the oil coats the bottom.
  • Place the tortilla in the skillet and sprinkle the cheese evenly over the top. Once the cheese begins to melt, 30 seconds to 1 minute, use a spatula to fold the tortilla in half. Using the spatula, press down firmly on the top of the tortilla until some of the cheese runs out into the pan. Let the quesadilla cook until the cheese that's leaked out solidifies and turns brown, 2 to 3 minutes.
  • Flip the quesadilla over and let cook on the other side for another 1 to 2 minutes, until the cheese is crisp and golden. Slide quesadilla onto a plate and serve immediately.

2 teaspoons oil (such as olive, grapeseed or sunflower oil)
1 (8-inch) flour tortilla
2/3 cup shredded cheese (such as Cheddar, Monterey Jack or Mexican cheese blend)

COWBOY CAVIAR QUESADILLAS

Cowboy caviar is a wonderful appetizer on its own, which I often serve with tortilla chips in place of salsa. But when combined in a cheesy quesadilla ... it's next level!

Steps:

  • For the cowboy caviar: Preheat a grill pan over high heat or prepare a grill for high heat and oil the grill grates. Place the corn on the grill pan or grill and cook, turning, until charred in spots, about 8 minutes. Transfer to a cutting board.
  • When the corn is cool enough to handle, cut off the kernels and put in a medium bowl. Add the black beans, avocado, cilantro, tomatoes and scallions.
  • Put the lime juice, olive oil, garlic and cumin in a small bowl. Season with salt and whisk together. Pour the dressing over the vegetable mixture and gently toss until coated. Allow to sit for 30 minutes.
  • For quesadillas: Lay the tortillas on a work surface. Brush one side of each tortilla with oil. Flip and top one side of each tortilla in this order: 1/4 cup cheese, a healthy helping of cowboy caviar and 1/4 cup cheese. Fold the tortillas over the filling and gently press.
  • Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Working in two batches, cook the quesadillas until the cheese melts and the tortilla is lightly browned, about 2 minutes per side.
  • Cut into wedges and serve with more cowboy caviar. Enjoy!

1/4 cup olive oil, plus more for the grill
2 to 3 ears fresh corn, husked
One 15-ounce can black beans, rinsed and drained
2 to 3 avocados, diced
1 bunch cilantro, chopped
2 Roma tomatoes, chopped or 1/2 container cherry tomatoes, quartered
2/3 cup chopped scallions
1/4 cup fresh lime juice
2 cloves garlic, minced
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
4 large flour tortillas (burrito-size)
Safflower oil or other neutral oil with a high smoke point, for frying
2 cups freshly grated pepper jack cheese
