- Scatter shrimp/crab over cheese mixture, add seafood sauce, then remaining ingredients.

NORMAN'S "STICK & STAY" CRAB DIP

Steps:
- Put the crab meat in a medium bowl, add the mayonnaise and sour cream and mix together. Fold the tomatoes, artichoke hearts and scallions into the mixture. Add salt and pepper.
- For a cold dip: Refrigerate the mixture until chilled, about 30 minutes. Serve with your choice of bread or crackers.
- For a warm dip (our favorite): Preheat the oven to 325 degrees F. Transfer the mixture to a baking dish and top with the Parmesan. Bake until the cheese is melted, 10 to 15 minutes. Serve with your choice of bread or crackers.
CRAB AND CREAM CHEESE DIP
Steps:
- Place 1/2 the crabmeat in the bowl of a food processor. Add 1/3 of the cream cheese, hot sauce, Worcestershire, horseradish, mustard, 2/3 of the green onions, salt, and pepper. Puree, running the processor for about 15 seconds. Scrape the sides and bottom of the bowl with a rubber spatula, add 1/2 the remaining cream cheese, and puree until well blended, about 15 seconds. Stop and scrape the bowl again, add the remaining cream cheese, and process until well incorporated. Adjust seasoning. Fold in the remaining onions and crabmeat and serve as a dip. Or, to make canapes, reserve the remaining crabmeat, place the puree in a pastry bag, and pipe it onto crackers or toast points. Season the reserved crabmeat, and garnish the canapes with the crabmeat and the remaining green onions.

- Spread seafood sauce on top of first layer.
- Scatter crab meat.
- Add onions and green pepper.

- Preheat the oven to 325˚F (160˚C).
- Melt the butter in a medium pan over medium-low heat. Add the onion, garlic, and salt. Cook for 12-15 minutes, until the onions are caramelized. Remove from heat and transfer to a small bowl to cool completely.
- Using a fine-mesh strainer, drain crab meat over a bowl.
- In a medium bowl, combine the cream cheese, sour cream, mayonnaise, Worcestershire, hot sauce, Old Bay, and lemon juice. Using an electric mixer, beat together until well combined. With a flexible spatula, fold in the onion mixture, ¾ cup (75 grams) cheddar cheese, and the crab meat.
- Transfer the dip to a 1-quart baking dish. Top evenly with the remaining cheddar cheese.
- Bake for 20-25 minutes, until the mixture is just beginning to bubble around the edges and the cheese is melted.
- Heat the broiler to low. Broil dip for 3 minutes, until the whole surface is bubbling and browned. Remove the dip from the oven. Let cool for at least 15 minutes, until set.
- Garnish the dip with Old Bay and chives. Serve with carrot sticks, celery sticks, crackers, and crostini.

- In a large microwave-safe bowl, combine the cornstarch and the wine or broth until smooth. Add cream cheese. Cover and microwave on high for 45 seconds; stir. - In a bowl, combine the cream cheese, sour cream, and mayonnaise until well-blended. Spread into a 9x13 inch baking dish. Scatter the shrimp generously over the top of the mixture.
- In another bowl, stir together the cocktail sauce, green pepper, green onions, garlic, and tomato.
- Working in layers, spread a portion of the cocktail sauce mixture over the shrimp. Sprinkle with a portion of mozzarella cheese. Repeat process until all ingredients are used up, finishing with a layer of mozzarella cheese on top. Serve with assorted crackers for dipping.
