CRAB BRUNCH CASSEROLE
A delicious casserole - elegant enough for a Sunday brunch!

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking dish.
- In large bowl, mix the eggs, milk, croutons, cheese, onion, and parsley. Stir in the crabmeat. Season with salt and pepper. Spoon into the prepared baking dish, and sprinkle with Parmesan cheese.
- Bake 1 hour in the preheated oven, or until a knife inserted into center of the casserole comes out clean. Serve immediately.

HOT CRABMEAT COBBLER
(must try this!) I found this recipe hidden in my mother's recipes and will be making it for her. She loves, but rarely has, crabmeat. This sounded like the best, unique crabmeat meal I have seen! Hope you think so too!

Steps:
- Heat oven to 450°F.
- Melt butter on top of double broiler, add in onion and green pepper.
- Cook over boiling water until tender--approximately 10 minutes.
- Blend in the mustard, flour, msg, milk, and cheese.
- Stir constantly until cheese has melted and mixture has thickened.
- Add crabmeat, tomatoes, Worcestershire, and salt.
- Blend, combining thoroughly.
- Pour mixture into 2 quart casserole dish.
- In bowl, sift in flour, baking powder, salt, and cheese.
- Cut in the shortening until particles are fine.
- Add the milk.
- Mix only until flour has moistened.
- Drop by rounded teaspoons over hot crabmeat mix.
- Bake 20-25 minutes.

After several days of craving a crab bake casserole like the one at my local Chinese buffet, I came up with this recipe by tweaking one that I found online. To me, this tastes pretty close to those that I've had at several chinese buffets.

Steps:
- Mix all ingredients together. Place into pan and sprinkle cheddar cheese on top. Bake in 350 degree oven for approximately 30 minutes.
- VARIATION: You can mix seafood types -- use 1/2 lb. crab and 1/2 lb. shrimp, lobster, or other seafood.

- Score cucumber lengthwise with tines of fork if desired. Cut into 36 (1/4-inch) slices.
- In small bowl, beat cream cheese with electric mixer on low speed until creamy. Beat in mayonnaise until well blended. Stir in chopped basil, onion, lemon peel and crabmeat.
- Spread or pipe about 1 teaspoon crabmeat mixture on each cucumber slice. Sprinkle with capers. Garnish with basil leaves.

CRABMEAT COBBLER
This recipe came from an Old Pillsbury Bakeoff Booklet. I grew up having this on special occasions. VERY rich; serve with a simple side dish such as a plain salad.

Steps:
- Melt Crisco in top of double boiler. Add green pepper & onion. Cook until tender. Blend in flour, dry mustard, accent, milk & Velveeta. Cook, stirring until Velveeta is melted. Add crabmeat, tomatoes, worchestershire & salt. Pour into 2 qt. casserole.
- Cheese Biscuit Topping: Sift together flour, baking powder & salt. Add Velveeta & cut in Crisco until mixture resembles coarse meal. Add milk & mix until flour is dampened. Drop by rounded teaspoonfuls on top of cobbler. Bake @ 450 degrees for 15-20 minutes.

- Preheat the oven to 400 degrees.
- Melt the butter in a medium-size saucepan over medium heat. Add the green onions, celery and pimentos and cook, stirring, until the vegetables are just soft, about 6 minutes. Blend in the flour. Slowly add the half-and-half, stirring constantly, until the mixture is thick and creamy.
- Add the lemon juice and season with salt and cayenne. Gently stir in the crabmeat. Spoon the mixture into a lightly greased oval baking dish. Arrange the biscuits over the mixture and bake until they are golden brown, 10 to 12 minutes. Remove from the oven and sprinkle with the grated cheese. Let sit for a few minutes while the cheese melts. Serve warm.

- Heat oven to 350°F. Cook noodles as directed on package.
- Meanwhile, in 3-quart saucepan, melt butter over medium heat. Add onion and garlic; cook 2 to 3 minutes, stirring occasionally, until onion is crisp-tender. Stir in flour; cook and stir until bubbly. Gradually stir in half-and-half, broth, sherry, salt and pepper. Heat to boiling, stirring constantly. Boil and stir 1 minute. Remove from heat and set aside.
- In medium bowl, mix egg, Parmesan cheese, ricotta cheese and 1/4 cup parsley; set aside.
- Drain noodles. In ungreased 13x9-inch (3-quart) glass baking dish, spread 3/4 cup of the sauce. Top with 3 noodles. Spread half of the crabmeat and half of the shrimp over noodles; spread with 3/4 cup of the sauce. Sprinkle with 1 cup of the mozzarella cheese; top with 3 noodles. Spread ricotta mixture over noodles; spread with 3/4 cup of the sauce. Sprinkle with 1 cup of the mozzarella cheese; top with 3 noodles. Spread with remaining crabmeat, shrimp and sauce. Sprinkle with remaining 1 cup mozzarella cheese.
- Bake 40 to 45 minutes or until cheese is light golden brown. Let stand 15 minutes before cutting. Sprinkle with 1 tablespoon parsley.
