FRESH CRANBERRY CAKE

A beautiful and easy cake to make! Great for the holiday season and even better in the summer with any fresh berry you have on hand!

Fresh Cranberry Cake image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine flour, baking soda, and salt in a bowl. Beat 1 cup sugar and 3 tablespoons melted butter with a whisk until well mixed. Add eggs and beat until smooth. Stir flour mixture and milk into egg mixture until batter is well blended. Fold cranberries into batter until just mixed and pour into prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.
  • For sauce, heat 1 cup sugar, 1/2 cup butter, heavy cream, and vanilla extract in a saucepan over medium-low heat; cook and stir cream sauce until sugar is dissolved, about 10 minutes. Pour hot sauce over hot cake. Allow cake to cool in the baking dish for 10 minutes before removing to cool completely on a wire rack.

Steps:

  • 1. Cream shortening and sugar thoroughly. Add eggs, one at a time, beating well after each addition. Sift flour, baking power and salt. Add sifted ingredients to creamed mixture alternating with milk, blending well. Fold in cranberries and pecans. Spread in greased and floured tube pan.
  • 2. Bake 350 degrees for 1 hour. When cool simply sprinkle with confections' sugar.
  • 3. GLAZE: MIX CONFECTIONERS' SUGAR WITH ENOUGH CRANBERRY JUICE UNTIL LIKE HEAVY CREAM.   • In a large bowl, cream butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Steps:

  • Heat oven to 400°F. Grease square pan, 9x9x2 inches.
  • Stir Bisquick, granulated sugar, 2/3 cup water and egg in medium bowl until blended; beat vigorously 30 seconds. Spread in pan. Mix brown sugar, walnuts and cinnamon; sprinkle over batter. Spoon cranberry sauce over top.
  • Bake 20 to 25 minutes or until toothpick inserted in cake area comes out clean.

DELICIOUS CRANBERRY CAKE

We eat this colorful, moist cake at our women's church meetings. It's really easy to make and very tasty. The almond flavoring really blends well with the cranberries. I buy bags of cranberries when there are sales during the holidays, then freeze some so I can enjoy this treat all year round. For those with hard nut allergies, leave them out, or try sunflower seeds or peanuts. Vanilla extract can be substituted for almond extract.

Cranberry Bundt® Cake image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Mix together flour, sugar, baking soda, and salt for the cake in a large bowl. Add mayonnaise and cranberry sauce; mix until well combined. Add orange juice and mix well. Stir in nuts and orange zest and pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Cool on a wire rack for 5 minutes. Tap the pan a few times to loosen the cake and invert carefully onto a serving plate.
