HOMEMADE CREAM OF STYLE SOUP MIX - SUBSTITUTE
I found this in one of the magazines I subscribe to, Cooking for Two. There are several other mixes like this here at Zaar, but this one has several other ingredients and is much more and I like it. The variations are posted below.

Steps:
- Combine all ingredients in an airtight container. Store in a cool dry place for up to a year.
- To use: for one can condensed cream of chicken soup, heat 1 1/3 cups water and 6 tablespoons of mix in a microwave safe bowl. Heat on high for 3-5 minutes or until thick and bubbly whisking occasionally.
- For mushroom soup, add 1/2 to 1 cup sautéed sliced mushrooms.
- For celery soup, add 1 sautéed chopped celery rib or 1/4 teaspoons celery salt.
- For 1/2 a can, divide measurements in half. This comes in handy when making half a recipe.
CREAM SOUP MIX (REPLACEMENT FOR CREAM OF ___ SOUPS) SUBSTITUTE

- Mix all the ingredients together.
- Store in an airtight container.
- For the equivalent of 1 can of cream soup, mix 1/3 cup of dry mix with 1 1/4 cups of cold water. Cook in sauce pan until thick.
- Entire recipe makes the equivalent of nine cans of cream soup.

CREAM OF SOUP SUBSTITUTE MIX
From my "Heart Healthy Cookbook" of delicious healthy recipes from Edina, MN in 1995. Make 9, 10 ounce cans of soup. This is much less expensive and contains far less sodium than canned soups. Add sautéed chopped mushrooms, chopped celery, or bits of cooked chicken to resemble the cream soup you usually use.

CREAM OF ANYTHING SOUP MIX SUBSTITUTE

- Mix dry milk, cornstarch, soup base, onion flakes, thyme, dill and celery salt.
- For equivalent of 1 can cream of chicken soup combine and heat 1/3 cup dry mix and 1 1/4 cups water.
- For equivalent of 1 can cream of mushroom soup combine and heat 1/3 cup dry mix, 1 1/4 cups water, 2 ounces finely chopped mushroom pieces and 1 teaspoon salt.
- For equivalent of 1 can cream of celery soup combine and heat 1/3 cup dry mix, 1- 1/4 cups water and 1/8 cup celery flakes.
CREAM SOUP SUBSTITUTES
When your recipe calls for a can of condensed soup, just make your own! This makes the equivalent of one can of condensed soup (10.5 ounces). Note the suggested variations that can be made to this recipe.

Steps:
- Melt butter in a saucepan over medium-low heat.
- Stir in flour; a little at a time; stirring until combined and smooth.
- Remove from heat and add the broth and milk, a little at a time, stirring to keep lump-free.
- Return to heat.
- Bring sauce to a gentle boil and cook, stirring constantly, until it thickens.
- Taste and adjust seasonings.
- Stir in optional ingredients if desired.
