Baked Alaskan halibut in a creamy wine-caper sauce. Garnish with fresh dill, lemon, and paprika.

Steps:
- Season halibut fillets with salt and pepper.
- Melt butter in a skillet over medium heat; add onion. Cook and stir until translucent, about 5 minutes. Add wine; simmer until slightly reduced but still juicy, about 5 minutes. Pour mixture into the bottom of a baking pan. Place seasoned halibut on top.
- Preheat oven to 350 degrees F (175 degrees C).
- Combine sour cream, mayonnaise, garlic, seafood seasoning, white pepper, paprika, and dill in a bowl. Season with salt. Pour on top of halibut. Sprinkle green onions, panko, and capers on top.
- Bake in the preheated oven until the fish flakes easily with a fork, about 15 minutes.

- Heat grill to medium-high heat.
- Spoon 1/2 cup rice onto center of each of 4 large sheets of heavy-duty foil with sides slightly rolled up. Pour 1/2 cup warm water over each mound of rice; top with 1 fish fillet. Arrange spinach around fish; drizzle with dressing.
- Bring up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside.
- Grill 10 min. or until fish flakes easily with fork. Cut slits in foil to release steam before opening packets; top with cheese.

Legend has it that when Catherine de Medici of Florence was wed to Henry of Aragon, she brought a Florentine chef with her to prepare the foods she adored. The Florentine style of cooking leans toward simple preparations of fresh foods to make consistently appealing meals. Traditionally, this dish uses a flaky white fish such as sole, cod, or halibut, but it does wonders for a salmon fillet or even orange roughy. Pack as much spinach as possible into the pot as it will cook down significantly Don't be afraid to push down the leaves with the heel of your hand. Just be sure that the seal around the lid is tight when the pot goes in the oven.

- Preheat the oven to 450°F.
- Spray the inside and lid of a cast-iron Dutch oven with olive oil.
- Line the bottom of the pot with about half the spinach. Add the fish and spray lightly with olive oil. Cover with a single layer of lemon slices and garlic.
- Layer the remaining spinach and arrange the tomato slices on top, leaving just enough room for the lid to fit securely. If desired, sprinkle lightly with Parmesan cheese or bread crumbs.
- Cover and bake for 40 to 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately with the lemon wedges and, if desired, sprinkle with grated Parmesan

- Melt butter in sauce pan.
- Add flour.
- Add milk and stir until thick to make a white sauce.
- Add 1/4 cup of the parmesan cheese and stir until melted.
- Add salt and pepper to sauce to taste.
- Place spinach in bottom of casserole dish.
- Top with fish fillet(s).
- Cover with white sauce.
- Combine Mozzarella, 1/4 cup of Parmesan, cheddar cheese, bread crumbs and Old Bay Seasoning.

Steps:
- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- In a heavy-bottomed saucepan over medium-low heat stir together the half and half cream with cheddar cheese and Parmesan cheese until melted and smooth; mix in the flour and water stirring constantly until thickend and smooth; remove from heat.
- Sprinkle the spinach evenly into the baking dish.
- Brush the halibut on both sides with melted butter, then season with seasoned salt (or white salt) and black pepper on both sides.
- Place the halibut steaks over the spinach, then pour the cheese sauce over the halibut.
- Bake 35-40 minutes or until fish flakes easily with a fork.
