Steps:
- Take sausage out of casings and crumble.
- Put olive oil and chopped garlic in a skillet and turn the heat to medium.
- When the garlic becomes pale gold, add the sausage.
- Turn from time to time, until nicely browned all over, about 15 minutes.
- Add the tomato and cook, uncovered, stirring occasionally, adjusting the heat if necessary so it will cook at a gentle simmer.
- After about 20 minutes, when the fat separates from the other juices and floats free, add the cream and turn up the heat.
- Cook for 1 to 2 minutes, stirring frequently, until the cream is reduced.
- Add salt and a liberal grinding of pepper.
- Turn off the heat and stir in the chopped parsley.
- Cook pasta in pot of boiling salted water.
- When tender, but firm to the bite, drain; toss immediately with sauce.
- Serve at once with freshly grated parmesan cheese.
- NOTES: The sauce maybe be prepared several hours in advance.
- It should be reheated gently when the pasta is almost cooked.
- I always double the sauce because in my house there never seems to be enough.
- My family loves this sauce.
- Double everything except the sausage, pasta and parmesan cheese to double the sauce.

CREAMY SAUSAGE PENNE
This luscious pasta dish is one I've avoided making recently; it's not exactly a lowfat dinner and I feel guilty serving it to my husband -- neither of us should be eating such a high calorie meal. But it's so, so good! Even though I can't claim it's part of a healthy diet, I hope you try it at least once -- it's a fast, easy dish, after all! I serve this with a simple green salad.

- Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
- Cook until sausage meat is no longer pink (about 5 minutes or so).

CREAMED SAUSAGE FOR BISCUITS
This sausage mixture takes very little time to put together, and when poured over freshly baked biscuits, the results are out of this world! It's a great dish for breakfast or brunch. (See my recipe for Southern Bisquits.)

Steps:
- Sausage Mixture: Break sausage into bits in a large frying pan.
- Add diced onions.
- Fry onions and sausage together until both are browned.
- Drain mixture onto paper towels and set aside.
- White Sauce: To make a white sauce, an easy method is to use a medium or large saucepan, and it requires constant attendance, but it only takes a few minutes to make a delicious sauce.
- Melt the butter over a low flame.
- Add the flour and stir continuously.
- (You do not want the flour to brown; rather, stir the flour and butter and watch carefully as this slow cooking method takes the starch flavor away and makes for a better sauce.) Just as the flour mixture is beginning to color and looks like it might get brown, slowly add some milk and keep stirring.
- As the mixture thickens, add more milk and keep stirring, careful that the sauce doesn't burn.
- Soon, the sauce will be at the right consistency depending upon how much milk you use-- you'll want a thick sauce, not thin.
- Add the sausage and onion mixture to the sauce, and mix well.
- Salt and pepper to taste.
- Pour the creamed sausage over freshly baked bisquits.
- (Cooking time is included in preparation time.).

Steps:
- Heat the oil in a large frying pan over a medium heat and cook the onion until softened and translucent, about 8 mins. Push to one side of the pan.
- Squeeze the sausagemeat from the skins into the centre of the pan. Cook for 5-8 mins until browned, squashing into smaller chunks with the spoon as it cooks. Add the garlic and tomatoes. Let the tomatoes soften for a few minutes, stirring now and then to prevent sticking. Stir in the harissa paste and mascarpone.
- Meanwhile, cook the pasta in salted water in a saucepan following pack instructions.
- Drain the pasta, saving a mugful of the water. Tip the pasta into the sauce, add the parsley and stir together. Add a splash of the pasta water to loosen the sauce - it should be silky and coat the pasta without pooling in the bottom of the pan. Grind over some black pepper to serve, if you like.

ONE-POT CREAMY SHELLS AND SAUSAGE
Just like your favorite boxed shells and cheese, this recipe turns out a dinner that's creamy, irresistible and made in a single pot. But unlike the boxed version, this upgrade will fill up the whole family-thanks to the addition of hearty Italian sausage and Muir Glen™ tomato basil pasta sauce. Cooking the whole meal in a single pot isn't just convenient, it also allows you to build flavor as you go. Here's what we mean: It all starts with browning the sausage until it's cooked through. Removing the sausage but not the rendered fat it leaves behind adds deep savory flavor to the onions, garlic and red pepper flakes that get sautéed next. After your aromatics, you'll add the tomato sauce, which is handy since it'll help deglaze the pan and integrate more flavor into your sauce. With the addition of the broth, you'll have enough liquid to cook your pasta. Once the pasta is cooked through, all that's left is adding the cream and cooked sausage. Serve this up with shredded Parmesan and basil, and you've got a delectable dinner that might just become a part of your regular rotation.
