Creamy Pasta and Sausage image

Steps:

  • Take sausage out of casings and crumble.
  • Put olive oil and chopped garlic in a skillet and turn the heat to medium.
  • When the garlic becomes pale gold, add the sausage.
  • Turn from time to time, until nicely browned all over, about 15 minutes.
  • Add the tomato and cook, uncovered, stirring occasionally, adjusting the heat if necessary so it will cook at a gentle simmer.
  • After about 20 minutes, when the fat separates from the other juices and floats free, add the cream and turn up the heat.
  • Cook for 1 to 2 minutes, stirring frequently, until the cream is reduced.
  • Add salt and a liberal grinding of pepper.
  • Turn off the heat and stir in the chopped parsley.
  • Cook pasta in pot of boiling salted water.
  • When tender, but firm to the bite, drain; toss immediately with sauce.
  • Serve at once with freshly grated parmesan cheese.
  • NOTES: The sauce maybe be prepared several hours in advance.
  • It should be reheated gently when the pasta is almost cooked.
  • I always double the sauce because in my house there never seems to be enough.
  • My family loves this sauce.
  • Double everything except the sausage, pasta and parmesan cheese to double the sauce.

Creamy Sausage Penne image

Steps:

  • Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
  • After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
  • Cook until sausage meat is no longer pink (about 5 minutes or so).
  • Add cream, salt, pepper and nutmeg to skillet and turn heat to high to bring mixture to a boil.
  • Reduce heat and simmer, gently, until the cream reduces and the sauce thickens a bit; it takes about 10 minutes.
  • Place cooked penne in a large serving bowl (it's nice if you warm it first) and pour sauce over; add butter and cheese to bowl and combine all well.
  • Taste; add more salt and/or pepper if you wish.
  • Sprinkle chopped herbs over top and serve.

  • Place potatoes in a 5 qt roasting pan.
  • Add onions, peppers and sausage; toss gently.
  • Combine oil, basil, salt and pepper. Pour over meat and vegetables; toss well.

  • Add the cream; cover and bake 30-40 minutes longer (or until potatoes are tender).

  • Sausage Mixture: Break sausage into bits in a large frying pan.
  • Add diced onions.
  • Fry onions and sausage together until both are browned.
  • Drain mixture onto paper towels and set aside.
  • White Sauce: To make a white sauce, an easy method is to use a medium or large saucepan, and it requires constant attendance, but it only takes a few minutes to make a delicious sauce.
  • Melt the butter over a low flame.
  • Add the flour and stir continuously.
  • (You do not want the flour to brown; rather, stir the flour and butter and watch carefully as this slow cooking method takes the starch flavor away and makes for a better sauce.) Just as the flour mixture is beginning to color and looks like it might get brown, slowly add some milk and keep stirring.
  • As the mixture thickens, add more milk and keep stirring, careful that the sauce doesn't burn.
  • Soon, the sauce will be at the right consistency depending upon how much milk you use-- you'll want a thick sauce, not thin.
  • Add the sausage and onion mixture to the sauce, and mix well.
  • Salt and pepper to taste.
  • Pour the creamed sausage over freshly baked bisquits.
  • (Cooking time is included in preparation time.).

  • In a large pot, set on medium heat, add the olive oil and sauté the onions, celery, carrots, and garlic until they are soft, about 10-15 minutes.
  • Add garlic and cook for an additional 2-3 minutes.

  • Preheat the grill. Grill the sausages for 15-20 minutes, turning occasionally, until they are evenly browned and cooked through.
  • Meanwhile, chop the onion, carrots and celery into small pieces. (A food processor can make short work of this.) Heat the sunflower oil in a medium pan. Fry the bacon for 2 minutes, then stir in the chopped vegetables and thyme. Cook over a medium heat for 8 minutes, stirring occasionally, until the vegetables have softened and are beginning to brown.

  • Heat the oil in a large frying pan and cook the onion for 3-4 mins over a medium-high heat. Add the sausage chunks and cook for another 5 mins to brown all over.   • Heat the oil in a large frying pan over a medium heat and cook the onion until softened and translucent, about 8 mins. Push to one side of the pan.
  • Squeeze the sausagemeat from the skins into the centre of the pan. Cook for 5-8 mins until browned, squashing into smaller chunks with the spoon as it cooks. Add the garlic and tomatoes. Let the tomatoes soften for a few minutes, stirring now and then to prevent sticking. Stir in the harissa paste and mascarpone.
