Steps:

  • Heat oven to 325°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In small bowl, mix soup and sour cream. Arrange chicken in single layer in baking dish. Top with ham. Spoon soup mixture evenly over the top.
  • Bake uncovered about 1 hour or until chicken is no longer pink in center. Sprinkle with parsley.

Ham and Cheese Stuffed Chicken Breasts image

Steps:

  • Insert a paring knife into the thickest part of each chicken breast to make a 3-inch-long pocket down the side, cutting in about halfway. Rub the insides of the pockets with 1 tablespoon of the mustard for all 4 breasts. Stuff each breast with 2 half slices of ham and 1 slice of provolone, folding them to fit. Rub both sides of the chicken breasts with the olive oil and sprinkle with the salt and pepper.
  • Heat a nonstick skillet over medium-high heat until very hot, 3 to 5 minutes. Add the chicken breasts and cook until golden brown and just cooked through, 6 to 8 minutes per side depending on the thickness of the chicken; reduce the heat to medium if the chicken becomes too dark towards the end of the cooking time. Cover the skillet with a lid or a piece of aluminum foil during the last 3 minutes of cooking time to finish cooking the chicken through to an internal temperature of 160 degrees F. Check the temperature at the thickest part of the breast without stuffing.
  • Transfer the chicken to 4 plates or a cutting board and add the chicken broth and remaining 1 tablespoon mustard to the skillet. Cook, whisking, over medium-high heat until the sauce has reduced by about half, 3 to 4 minutes. Remove from the heat and swirl in the butter and chopped herbs.
  • Depending on the size of the breasts, either put 1chicken breast on each of 4 plates or slice all the breasts and divide among 6 plates. Spoon the sauce over the chicken and serve with Crispy Sliced Roasted Potatoes on the side.

  • Place a rimmed baking sheet in the center rack of the oven and preheat the oven to 425 degrees F.
  • Thinly slice the potatoes about 1/8-inch thick and toss with the oil, salt and pepper. Carefully spread the slices on the hot baking sheet in a single layer and roast until golden and crispy, turning with a metal spatula occasionally and spreading them out to cook evenly, 30 to 35 minutes.

Four 8- to 10-ounce boneless skinless chicken breast halves
2 tablespoons Dijon mustard
4 slices deli ham, each slice halved (about 3 ounces)
4 thin slices provolone (about 2 1/2 ounces)
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

1 tablespoon unsalted butter
1 tablespoon chopped fresh herbs, such as parsley, chives or dill
1 1/4 pounds red-skinned potatoes
2 tablespoons olive oil

CREAMY SMOKY BAKED CHICKEN WITH HAM

This is a old throw back recipe, re-done, but it can't get simpler. I don't often use soup in my recipes, but I really happen to like this one. Paired with smoky ham, white wine and smoky gouda; or even a smoky mozzarella or smoky white cheddar will work. This combination of the smoky ham and cheese is what really makes this dish. To serve, try a wild white rice blend or even just white rice. I like to add some fresh scallions to finish off the rice.

Creamy Smoky Baked Chicken With Ham image

Steps:

  • Chicken -- First and most important, bring your chicken to room temp and season well with salt and pepper on both sides.
  • Casserole -- Pick a pan so that all 4 breasts fit well side by side. You want the sauce on the chicken not sitting on the bottom of the pan. Too big of pan does not work well for this dish. Spray with a non stick such as Pam and add your chicken.
  • Sauce -- In a small bowl, add the sour cream, soup, white wine and ham and mix well.
  • Spoon the sauce over each chicken breast and top with a light sprinkle of black pepper.
  • Bake -- Heat the oven to 325 degrees and bake uncovered for 45 minutes. Top with 1/4 cup of the cheese and cook another 10-15 minutes, until the cheese is melted and gooey.
  • Serve -- I love a mix of wild and white rice (Uncle Bens is great, Whole Foods has a great brown rice, or just any white rice will work. I garnish the rice with fresh scallions (white and green parts) and cooked chicken broth which I think really helps. Then add each breast and any additional sauce over the top. Garnish with the fresh tarragon or you can use parsley. Roasted lemon zucchini is a great side dish.

1 lb boneless skinless chicken breast (4 breasts)
1 cup smoked ham, chopped pretty fine (important to use a smoky ham, this is a key ingredient for this dish. I bought a slice of smoked ham)

Steps:

  • Heat the oil and butter in an ovenproof casserole over a medium heat. Add the onion, leeks and carrots and a pinch of salt, and fry gently for 10 mins until softened and translucent. Add the chicken, turn up the heat and fry for 5 mins. Pour in the cider, cook for 3 mins, then pour in the chicken stock and add the bunch of thyme. Bring to a simmer, season to taste, then reduce to a low heat and cover the pan. Cook for 30 mins.
  • Heat the oven to 180C/160C fan gas 4. Make the dumplings by mixing together the flour, baking powder, mustard powder, the suet or butter, parsley and ½ tsp salt. Swiftly mix in 8-10 tbsp of water and bring together with your hands. The dough should be firm and pliable. Divide into eight equal-sized pieces, weighing for accuracy if you like.
  • Remove the bunch of thyme from the stew and discard. Spoon a little of the liquid into a bowl and mix with the cornflour, then stir the mixture into the casserole. Add the ham hock, peas and mustard. Arrange the dumplings on top of the stew, then put in the oven, covered, for 30 mins. Remove the lid and cook for a further 10 mins until the dumplings are puffed up and golden brown. Serve in bowls. To freeze the stew, leave to cool completely, then transfer to a freezerproof container. Will keep for up to three months. Defrost thoroughly, then reheat until piping hot.
