Steps:
- Preheat the oven to 325 degrees.
- Butter two 8 oz ramekins, and then crack 2 eggs inside each. Be careful not to break the yolks.
- Sprinkle parmesan cheese on top, and then salt and pepper.
- Pour two tablespoons of cream over the egg mixture in each ramekin.
- Place the ramekins on a cookie sheet and bake for 10 to 20 minutes, or when they are done to your liking.

CREAMY BAKED EGGS
This is part of our traditional Christmas morning breakfast, and is perfect for any brunch when you want to prepare dishes the day before. Of course, you can just assemble and cook, but it is the convenience of having the dish ready to bake, and eliminating the mess in the morning, (and the delicious taste!) which appeals most to me. I indicated that this serves 4, but it will serve 6 if you have other brunch items. The recipe can be doubled and baked in a 9x13 inch pan. I have used this recipe for at least twenty years after taking a Doris Simms cooking class in Ottawa.

Steps:
- Make sauce first. Can be made in the microwave if you wish.
- Melt 2 tablespoons butter in saucepan and add the flour.
- Whisk together till smooth, and fry gently for a few minutes which will remove the raw taste of the flour. Do not brown the roux.
- Add the milk while whisking to avoid lumps, and cook the mixture till thickened. This will make a thin sauce.
- Off heat, add the grated cheese, and whisk till it melts.
- Add salt and pepper to taste.
- Beat the eggs in a bowl to combine.
- Saute the green onion in 2 tablespoons butter to soften.
- Add beaten eggs and bacon.
- Fry-scramble, and remove from pan while they are still quite soft (nearly set), and combine with the sauce.
- Stir together, and place in a buttered 11x7 inch baking dish.
- Butter the bread.
- Whirl in a food processor to make buttered crumbs.
- Sprinkle on top of the sauced eggs.
- Can refrigerate, covered, overnight for baking the next morning.
- Bake, uncovered, at 350°F for 20 minutes, till set, and crumbs are toasted.

- Preheat the oven to 350˚ F.
- Set a large ovenproof skillet over medium-high heat. Add the olive oil and heat to shimmering, then add the onion and a pinch of salt. Cook until translucent, about 1 minute. Add the spinach and cook until wilted, about 1 minute. Add the cream and bring to a simmer. Add the nutmeg and Parmesan and season with a pinch of salt and a twist of pepper.
- Make 4 shallow depressions in the spinach mixture and carefully crack an egg into each one. Transfer the skillet to the oven and cook until the egg whites are set but the yolks are still runny, about 8 minutes. Serve immediately.

- In a mixing bowl, whisk together the milk, sour cream, mustard, chives, caraway, eggs and 1 teaspoon salt. With a wooden spoon, mix in the all-purpose and rye flours. Cover and let the batter rest for 1 hour.
- Set up your grill for even high heat. If using a charcoal grill, distribute the coals evenly. If using a gas grill, heat both sides evenly.
- Bring a large pot of salted water to a boil.
- Place a perforated pan on top of the pot or use a spaetzle maker and push the batter through the holes, letting the spaetzle drop down into the boiling water. Cook until the spaetzle floats, about 2 minutes, then another 1 to 2 minutes more.
- As the spaetzle is cooking, place a sauté pan on the grill. Add the butter and allow it to melt. Add a 4-ounce ladle of spaetzle water along with the spaetzle and toss to combine. Season with the nutmeg and salt and pepper to taste.

- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon softened butter.
- Melt the remaining 3 tablespoons butter in a skillet over medium heat. Add the mustard greens, garlic and a pinch of salt and pepper and saute just until wilted, 2 to 3 minutes. Remove from the heat and cool slightly.
- Whisk together the eggs, milk, baking mix, 1/2 teaspoon salt and some pepper in a bowl until well incorporated. Stir in the mustard greens, cheeses and hash browns. I won't promise you "Fast and Easy" With this one. It's a little more work than most but It's oh so worth the effort. It's called "Creamy" Due to the fact that there is a made from scratch cream sauce added instead of Ricotta Cheese. I am NOT a fan of Ricotta cheese so I think this version is a nice alternative. - In a large skillet over medium heat, add 1 tablespoons Olive oil and onions and saute 5 minutes or until tender.
- Add beef and brown.
- Meanwhile, In a large pot or dutch oven, cook pasta ala dente and drain well.
- Brown beef until it's no longer pink and drain off fat.
- In the same skillet, add to beef and onions, 1/2 teaspoons salt, garlic, pasta sauce, tomatoes, and tomato sauce.
- Stir to blend, Then set aside.
- In a heavy saucepan, melt butter over low heat, add flour and whisk constantly until smooth and well blended or about 1 minute, gradually add milk and simmer over medium heat, stirring constantly, until mixture bubbles and thickens.
- Remove from heat and stir in parmesan cheese and remaining 1/4 tsp salt and pepper.
- Pour beef mixture and milk mixture into dutch oven with noodles and mix until well blended.
- Transfer entire mixture to a large, buttered, baking dish or nonstick lasagne pan, top with shredded mozzarella cheese and bake at 350' for 20-25 minutes or until mixture is heated through and bubbly and cheese is melted and becoming crusty.

- Let stand approximately 5-10 minutes, and serve.

- Beat butter in a bowl using an electric mixer until smooth and creamy. Mix cream cheese and vanilla into creamed butter until smooth; stir in confectioners' sugar until incorporated. Cover bowl with plastic wrap and refrigerate until mixture is firm, about 2 hours.
