ROASTED VEGGIES WITH COUSCOUS
Light fluffy couscous with a touch of olive oil with roasted veggies. Dressed with olive oil and balsamic vinegar. A great vegetarian dish. A delight, summer or winter.

Steps:
- Preheat your grill to a high heat, outdoor or indoor.
- Brush vegetables lightly with olive oil, and place them on the grill. Cook, flipping over occasionally, until just tender.
- While the vegetables are grilling, bring water, salt, 1 tablespoon olive oil, and couscous to boil in a large pot. Once the water has come to a boil, remove the pot from the heat and let it stand 5 minutes. Fluff with a fork when done. Let couscous cool to room temperature.
- Place couscous on a plate and top with veggies. Drizzle with a small amount of olive oil and Balsamic vinegar.

- In a large skillet, saute the carrots, celery, onion and peppers in oil for 5-6 minutes or until vegetables are crisp-tender. Add the next five ingredients. , Stir in couscous. SEVEN-VEGETABLE COUSCOUS

- For the stew: Put the garlic, turnips, onion, carrot, fennel, raisins, ginger, salt, cumin, paprika, sugar, turmeric, cloves, and cinnamon in a large soup pot with a tight-fitting lid. Add 2 cups water and bring to a boil over high heat; cover, reduce the heat, and simmer until the vegetables are somewhat soft, about 10 minutes. Halve and seed the butternut squash and cut it into wedges. Tie parsley sprigs together with kitchen string. Add squash, zucchini, chickpeas, and parsley sprigs to the pot. Using your fingers and working over the pot, tear the tomatoes into big pieces and add them to the pot with their juices. Simmer the stew, covered, until it is slightly thick and fragrant, and the vegetables are fork tender but not mushy, about 15 minutes. (You can test the vegetables a bit sooner, remove them as soon as they are tender, and return them to the pot when you are ready to serve. All the vegetables should be tender enough to cut with the side of a fork, but still hold their shapes.) Remove cinnamon sticks.
- For the couscous: Bring water to a boil with the butter and salt in a small saucepan. Stir in the couscous, pull the saucepan off the heat, cover, and set aside until the water has been absorbed and the couscous is plump, about 5 minutes. Transfer to a bowl and fluff with a fork.
- To serve, spread the couscous over a large serving platter and, using a slotted spoon, mound the vegetables in the center. Pour some of the broth over the vegetables and sprinkle with the almonds. Pass the remaining broth and the harissa, if desired, at the

- Cook onions and garlic in butter in 2-quart saucepan, stirring frequently, until onions are tender.
- Stir in water and bouillon granules. Heat to boiling; remove from heat. Stir in remaining ingredients.
- Cover and let stand 5 minutes or until liquid is absorbed. Fluff lightly with fork.

COUSCOUS WITH VEGETABLES
Steps:
- Soak the couscous in cold water for 10 minutes to loosen the grains. Then steam over a saucepan of boiling water or stock for a further 5 minutes. This prevents the couscous from getting sticky and lumpy.
- Meanwhile burn the outside of the pepper over a naked gas flame. When the skin is black place pepper into plastic bag and seal. Rub from the outside to remove all the pepper skin.
- Roast the aubergine and zucchini in a preheated 220 degrees F oven.
- When all vegetables are ready finely chop them up and mix into the couscous. Add salt, tumeric, cumin, and black pepper, to taste. Steam for a further 5 minutes. Garnish with sliced tomatoes and serve.

This is a speedy, healthy (no added fat!)side dish. If you've never had couscous before, you should give it a try...it cooks really fast, and it has a nice, fluffy texture.

- Bring the broth to a boil in a saucepan. Stir in couscous, cover, and remove from heat.
- After five minutes, fluff couscous with a fork, cover again, and set aside.
- Combine chickpeas, vegetables, water, and sherry in a frying pan.
- Cover and cook 10 minutes over medium heat.
- Add seasonings and stir.
- To serve, ring couscous around a platter and mound the vegetable mixture in the center.

COUSCOUS VEGGIE SURPRISE
This is a nutritious, low(non?)-fat veggie main dish that I thought up on my way home from driving class today. So I came home and made this for lunch, and really surprised myself, since it tasted better than I had imagined! The secret ingredient here is cinnamon... don't be afraid to try it!

Steps:
- Combine lentils and water in a medium sized pot and bring to a boil over a high flame.
- Reduce flame to low, cover, and simmer.
- After 10 minutes, uncover, add 1/2 teaspoon salt (or to taste), and the shredded carrots and cabbage.
- Replace cover, and simmer again.
- After 5 more minutes, uncover again, add the frozen peas, cover, and simmer for a further 5 minutes.
- Now remove from flame, drain, and reserve the lentil-veggie water.
- If necessary, add some additional water to bring the reserved water to 3/8 cup quantity.
- In a separate saucepan, bring this water to a boil, add the couscous, stir once, switch off burner, cover, and let it sit for 5 minutes.
- After 5 minutes, uncover, and fluff up the couscous with a fork.
- Toss with 1/2 teaspoon butter, if desired.
- Meanwhile, spray a non-stick saucepan with cooking spray and saute the onions in it over a medium flame until translucent, about 3-4 minutes.
- Now add the drained lentil-veggie mixture, soy sauce, cinnamon, pepper, paprika and saute on a low flame until the mixture is fairly dry.
- Mix in with the cooked couscous, and eat immediately!

- In a 1 quart microwave safe casserole stir together broth, carrot, red pepper, onion powder, garlic powder, and bottled hot pepper sauce.
- Microwave, covered, on 100% for 2 to 3 minutes or until carrots are just tender, stirring once.
- Stir in spinach, couscous, and lemon juice.
- Cook, covered, on high for 1 to 1 1/2 minutes more or until spinach is just wilted and couscous has absorbed liquid. Stir in tomatoes, Parmesan, and cilantro.
- Sprinkle with mozzarella cheese.
- Let stand, covered, 1 minute or until cheese is melted.
