BASIL CREAM SAUCE
After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

Steps:
- In a food processor, combine basil and garlic. Begin processing, and pour in olive oil in a thin stream. Process for about 40 seconds, or until mixture begins to emulsify. Add pine nuts and Parmesan, then blend for 1 minute.
- Heat cream in a saucepan over low heat until simmering. Pour 1/2 of the hot cream into the processor with basil pesto, and pulse for 20 seconds to incorporate. Pour mixture back into cream, and simmer for 5 minutes, or until thickened.

BOWTIES WITH ITALIAN SAUSAGE IN A CREAM BASIL SAUCE

- Bring a large pot of salted water to a boil. Cook pasta for 8-10 minutes, or until al dente, drain and rinse with cold water. Set aside.
- In a large skillet, heat oil over medium heat. Add decased sausage to skillet and crumble with a wooden spoon as it cooks. Add red pepper flakes and continue sauteing until sausage is no longer pink. Add onion and garlic to skillet and continue until onion softens. Stir in tomatoes and salt, (if using fresh tomatoes saute them for 3 minutes until softened) then add light cream and parmesan cheese; simmer gently until mixture thickens (about 5 minutes). Stir in the cooked pasta and basil and heat through, about 3 minutes.

- Blend the green onion, basil, garlic, mayonnaise, sour cream, and Worcestershire sauce in a blender until creamy and pale green. Taste the sauce and season with salt and pepper, if needed.
CHICKEN IN BASIL CREAM
This recipe is a welcome change from the usual fried chicken. The cream sauce gives it a wonderful flavor.

- Place milk and bread crumbs in separate, shallow bowls. In skillet, heat butter or margarine to medium heat. Dip chicken in milk, then coat with crumbs. Cook in butter or margarine, on both sides, until juices run clear (about 10 minutes). Remove and keep warm.
- Add broth to skillet. Bring to a boil over medium heat, and stir to loosen browned bits from pan. Stir in cream and pimentos; boil and stir for 1 minute. Reduce heat.
- Add Parmesan cheese, basil and pepper. Stir sauce and cook until heated through. Pour mixture over chicken and serve!

The vinegar and cream go very well together. Best when sauteed chicken and asparagus is added to the mix. I use this sauce on pasta all the time.

- Heat olive oil and butter in a saucepan over medium-low heat. Stir in the onion, and cook until it has caramelized to a dark, golden brown, about 15 minutes. Stir in the balsamic vinegar, and cook for 1 minute before stirring in the chicken bouillon and cream. Bring to a simmer, then remove from the heat and stir in the Parmesan cheese until melted.

- Melt margarine in sauce pan and saute garlic for 1 minute.
- At low temperature add flour.
- Stir to make a paste.
- Slowly add milk to paste until you achieve an even consistency.

CHICKEN WITH BASIL CREAM SAUCE
This is a recipe I found in an advertisement and jotted some additions to before making. I like to serve it with a pilaf and green beans almondine.

Steps:
- Preheat oven to 350 degrees.
- Place milk in a shallow bowl.
- Place the bread crumbs and garlic powder in another shallow bowl.
- Dip the chicken in the milk, then coat the chicken well with the bread crumbs.
- Place the butter and olive oil in a skillet and heat till butter melts over medium heat.
- Brown the chicken over medium heat in the butter and olive oil mixture.
- Keep chicken warm in preheated oven.
- Add broth to skillet and bring to a boil over medium heat, scraping up the browned bits from skillet.
- Stir in cream and pimentos, boil and stir for 1 minute.
- Reduce heat and while stirring constantly add the cheese, basil, salt and pepper.
- Cook until heated through.
- Mix cornstarch with a bit of water and stir into sauce if sauce needs thickening.
- Place chicken on platter, and pour sauce over chicken before serving.
EASY CREAM SAUCE
This sauce is so quick and delicious! It can accompany any meat, fish or veggie medley! It's so rich, noone would know it was so cheap.

LEMON BASIL CREAM SAUCE
This is a cream sauce that is usually served over grilled salmon, but I use it over veggies and/or pasta. Very easy to make, BUT very fattening!!

- MELT butter in a large skillet over medium-high heat; add garlic, and saute 1 to 2 minutes.
- Add half-and-half and chicken broth.
- Bring to a boil, and cook 8 minutes or until reduced by half.
- WHISK together lemon juice and cornstarch until smooth.
- Whisk lemon juice and 1/2 teaspoon pepper into butter mixture, and cook, whisking constantly, 2 minutes or until thickened.
- Remove from heat.
- DO NOT ADD BASIL UNTIL READY TO SERVE.
