- Beat egg and add milk.
- Dip cutlets in egg/milk mixture.
- Coat cutlets in bread crumbs.
- In a frying pan, brown cutlets in oil.
- Remove and add sliced onion. Brown onion, then add soup and about half a cup of water.
- Bring soup mixture to a slow boil. Place cutlets back in pan. Simmer covered about 30 minutes.

- Pierce the sweet potatoes all over with a fork. Microwave until tender, about 10 minutes; cover and set aside.
- Meanwhile, spread the pretzel crumbs in a shallow dish. Season the turkey with 1 teaspoon paprika, 1/4 teaspoon salt and a few grinds of pepper. Brush 1 side of the cutlets with 1 tablespoon mustard and sprinkle with the thyme, then press into the pretzels to coat.
- Heat 1 1/2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add half of the turkey, pretzel-side down; cook until golden brown, 2 minutes. Flip and cook until just cooked through, 1 more minute. Transfer to a plate. Wipe out the skillet; add the remaining 1 1/2 tablespoons vegetable oil. Repeat with the remaining cutlets.
- Combine the butter, 1 tablespoon maple syrup and the remaining 1/2 teaspoon paprika in a bowl. Split the potatoes and top with the butter; fluff the flesh with a fork. Season with salt and top with the chives. Combine the remaining 2 tablespoons maple syrup and 1 tablespoon mustard. Serve the turkey with the potatoes and maple mustard.

- Season the turkey with salt and pepper and poultry seasoning. Set up a breading station of flour, then egg then bread crumbs. Bread cutlets and reserve them.
- Combine parsley, celery, scallions, apple, mushrooms and dress with salt, pepper, the juice of 2 lemons, 3 tablespoons olive oil. Butter toasted bread then chop into 1/4 inch dice. Toss bread and thyme into salad. Dampen the stuffing salad a bit with apple cider or juice and toss to combine.
- Melt 3 tablespoons of butter over medium heat in medium saucepan. Add flour and cook 1 minute then whisk in stock, season with salt and pepper and Worcestershire and thicken stock a few minutes over medium-low heat.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat, cook cutlets 10 minutes turning once. If the pan is too small to cook all 4, reserve 2 under foil and add another tablespoon olive oil and cook off remaining cutlets.
- Serve cutlets on raw stuffing salad and top with warm gravy.

- In a large skillet over medium-high heat, cook turkey in oil and 2 tablespoons butter until golden brown and no pink remains; drain. Remove and keep warm. , In the same skillet, combine 1/2 cup water, apple juice, 1 teaspoon bouillon and pepper; cook and stir over medium heat until bouillon is dissolved. - In a shallow dish or bowl, combine the cracker crumbs, Parmesan cheese, garlic powder and salt. Place the buttermilk in a shallow dish or bowl. Dredge the turkey cutlets in buttermilk and then in the crumb mixture. Preheat oven to 450 deg. Pour oil onto a large rimmed baking sheet. Place the baking sheet in the preheated oven and heat for 2 minutes. Remove the sheet from the oven, tilting the pan to coat evenly with oil. Arrange breaded cutlets on the sheet and spray cutlet tops with cooking spray. Reduce heat to 375 deg, and bake 20 to 25 minutes or until internal temperature reaches 165-170 deg.

- Heat broiler. If using a broiler-proof rimmed baking sheet, set rack 4 inches from heat; if using a broiler pan, set rack so that top of pan is 4 inches from heat. On sheet (or pan), arrange potatoes and mushrooms in a single layer. Sprinkle with bacon, sage, 1 teaspoon salt, and 1/4 teaspoon pepper.
- Broil, tossing every 5 to 6 minutes, until potatoes are tender and browned, 20 to 25 minutes. Transfer to a serving bowl (reserve sheet).

- Preheat oven to 350*.
- Spray a shallow baking dish with vegetable cooking spray.
- To prepare stuffing, in a large bowl, combine spinach, ricotta, onion, parmesan and oil.
- Mix well.
- Reserve 1/2 cup of mixture.
- Add egg white to remaining mixture.
- Lay cutlets flat on work surface.
- Spread 2 Tablespoons of stuffing over each cutlet.
- Tightly roll up cutlets, jelly-roll style.
- Press edges together.
- Place in prepared pan, seam side down.
- Bake until cooked through, about 30 minutes.
- While turkey is baking, place reserved spinach mixture and broth in a blender.
- Process until smooth, about 30 seconds.
- Transfer to a small saucepan; heat over low heat for 2 minutes.
- Spoon 2 tablespoons of sauce on each serving plate and top with slices of turkey, cut at an angle.
