PERFECT MARGARITAS
Before serving this classic Mexican cocktail, be sure to add a salt rim to your glass - but switch things up! We're sharing three flavored salts, so you can choose your favorite or try them all.

Steps:
- Moisten the rim of 6 rocks glasses with a lime wedge or water, then dip each glass in coarse salt.
- In a pitcher, combine the tequila, lime juice, orange liqueur and sugar and stir until the sugar dissolves. Add ice just before serving. Divide among the prepared glasses.
- Grate the orange zest onto a microwave-safe paper towel-lined plate. Microwave until the zest is dry, tossing every 30 seconds, about 1 1/2 minutes.
- Transfer the dried zest to a spice grinder along with the smoked paprika and 1 teaspoon kosher salt. Process until combined, then mix with 1 1/2 tablespoons more kosher salt.
- Grate the lime zest onto a microwave-safe paper towel-lined plate. Microwave until the zest is dry, tossing every 30 seconds, about 1 1/2 minutes.
- Transfer the dried zest to a spice grinder along with 1 teaspoon kosher salt. Process until combined, then mix with the cayenne, sugar and 1 more tablespoon salt.
- Using a spice grinder, process the hibiscus flowers until powdery, then mix with the kosher salt.
YUMMY MARGARITAS

- In a blender combine limeade, beer and tequila. Fill blender to the top with ice. Blend until thick and smooth.
- Salt the rims of 2 large margarita glasses. To do so, pour salt onto a small plate, moisten the rims of the glasses on a damp towel and press them into the salt.
- Serve the margaritas in the salted glasses and garnish with slices of lime.

THE PERFECT MARGARITA
A good margarita depends on the qualityof its ingredients; always use the best tequilayou can find. You'll get excellent results usinga citrus reamer, a small, fluted cylindricalwooden tool, to extract every last drop of juicefrom the limes.

- To salt-rim the glasses, rub a cut lime around the rim of each of 4 stemmed goblets. Fill a saucer with salt. Dip goblet, upside down, into salt. Refrigerate goblets until ready to use.
- Fill blender three-quarters full of ice cubes. Pour lime juice, tequila, and Cointreau over ice. Add sugar; blend, starting slowly, and then increasing to high speed, until ice is very finely chopped and mixture is frothy. Taste for sweetness; add more sugar if desired. Blend a few seconds more; pour into salt-rimmed glasses. Serve immediately.
CLASSIC MARGARITA

From The America's Test Kitchen Cookbook. My friend made these for our "bunco" group recently and they were delicious. I like the fact that it is all natural. It's more work than the typical bottled mixes but well worth the time. For the smoothest and most affordable flavor, use a reposado (rested in wood) tequila made from 100 percent blue agave (aged 12 months or less).

- Combine the lime juice, lemon juice, lime zest, lemon zest, sugar and salt in a large liquid measuring cup. Cover tightly with plastic wrap and refrigerate until the flavors meld, about 2 hours.
- Strain the juice mixture into a pitcher and stir in the tequila, Triple Sec and 1 cup of the crushed ice. Pour over additional crushed ice before serving.
- To make ahead: The recipe can be prepared through step 1 and refrigerated, covered tightly with plastic wrap, for up to 2 days. The longer the mixture sits, the more it mellows, eventually losing any harsh acidity and tasting of pure citrus only.
