VERY BERRY CRANBERRY SAUCE

Steps:
- Put the cranberries, orange juice, brown sugar, granulated sugar and whiskey in a large saucepan and bring to a gentle boil over medium-high heat. Reduce the heat to low and simmer for 15 minutes. Add the blueberries and raspberries and cook for another 3 to 4 minutes. Set aside to cool, then transfer to a jar and keep in the fridge until cold and thick.
THE BEST CRANBERRY SAUCE
Our classic cranberry sauce has the ideal texture of tart whole berries suspended in a sweet jammy sauce; we added citrus peel for a little extra brightness. Don't be tempted to skip the salt and and pepper at the end. It may seem a bit odd, but salt brings out the fruitiness of the berries while pepper gives the sauce a warm and spicy finish.

This recipe comes from Chef Paul Prudhomme's Louisiana Kitchen cookbook. This is such a wonderful flavor, I had to share it. The sauce is good anytime, not just at Thanksgiving!

Steps:
- In a 4-quart saucepan, combine the cranberries, water and sugar.
- Bring to a boil over high heat, and continue boiling until thickened, about 30-35 minutes, stirring occasionally.
- Toward the end of the cooking time, use a potato masher to mash all of the berries.
- Reduce the heat to low and add the butter and salt; simmer until butter melts, stirring occasionally.
- Remove from heat and stir in the vanilla.
- Cool to room temperature.
- Just before serving, fold in the sour cream and mix well.

- Place the sugars, orange juice, water, and cinnamon in a heavy saucepan, and stir to dissolve the sugar. Add the cranberries and bring the mixture to a boil. Cook over medium heat until the berries pop, about 10 minutes. Mash the mixture with a spoon to pop any unpopped berries and help thicken the sauce, if desired, and reduce heat to low and simmer until the sauce is the desired thickness, up to 10 more minutes.
- Remove from the heat, pour the sauce into a bowl, and chill until serving time. Sauce will thicken as it cools.

- In a small mixing bowl, beat the cream cheese, sour cream, honey and cinnamon until smooth.
- Spread onto a serving dish or plate.

This is my absolute favorite cranberry sauce recipe. I grew up eating the cranberries out of the can (or should I say avoiding them completely because they're pointless), and then I discovered there's more to cranberries than that jellied version of cranbery sauce. Don't stress about the alcohol because it's only for flavor. You won't really get drunk from this recipe unless you're drinking something while you make it.

DRUNKEN CRANBERRY SAUCE
A family recipe we have used for years. We love it as a side dish to our turkey on Thanksgiving day. Also goes well on chicken, pork, and beef. Makes a great treat as an appetizer served with crackers, or can even be used over vanilla ice cream. I like to add the orange zest a couple tablespoons at a time, as not to overdo it. Adjust sweetness by adding 1 tablespoon sugar at a time at the end of cooking if needed.
