Steps:

  • Melt butter over medium heat in a large skillet. Stir in green beans, bacon, onion, green pepper, and garlic; cook and stir until onions are translucent, about 2 minutes. Stir in cayenne pepper, Creole seasoning, and black pepper. Cover; reduce heat to low. Simmer until vegetables are tender, about 20 minutes. Season to taste with salt.

6 slices bacon, thick, chopped
1/2 onion, chopped
1/2 green bell pepper, chopped
2 garlic cloves, chopped
1 teaspoon cayenne pepper

Steps:

  • 1. Cook beans according to package directions. In a skillet, over medium heat, cook bacon until it is crisp. Remove bacon.
  • 2. Stir in chopped onion and bell pepper and cook for about 5 minutes or until onions are clear.. Stir in minced garlic for about 1 minute.
  • 3. Stir in the Worcestershire sauce, salt and pepper. and Cajun seasoning until blended. Stir in diced tomatoes and chilis.
  • 4. Bring to a boil; cook and stir for 2 minutes. Drain green beans and add to skillet. Stir in bacon until evenly distributed.

1 pkg (16 ounces) frozen cut green beans (use fresh if you have them)

Steps:

  • Heat the coconut oil in a Dutch oven set over medium heat. Add the leeks, carrots and celery, and saute until soft, about 5 minutes. Add the mushrooms, garlic, thyme, bay leaves and creole seasoning; stir, and saute 2 more minutes.
  • Add the mushroom broth, beer, tomatoes and pinto beans. Bring to a simmer, then cover with a tight-fitting lid and cook until the beans are tender, about 1 hour.
  • Uncover the pot and cook until the liquid is reduced by one-third, about 15 minutes. Season with 2 tablespoons of the miso paste and some pepper. Taste and add more miso as needed.

2 tablespoons coconut oil
4 leeks, white parts only, sliced thin and washed to remove dirt
2 medium carrots, chopped
2 stalks celery, chopped
8 ounces shiitake mushrooms, chopped
4 cloves garlic, diced
4 sprigs fresh thyme, chopped, or 2 teaspoons dried thyme
2 bay leaves
1 tablespoon Creole seasoning blend (should be spicy)
5 cups mushroom broth
One 12-ounce bottle dark beer
One 14-ounce can diced tomatoes with juices
2 cups dried pinto beans, soaked overnight and drained
2 to 4 tablespoons red miso paste (depending on saltiness)
Coarsely ground black pepper
Sour cream, for garnish
Sliced green onions, for garnish

New Orleans-Style String Beans image

Steps:

  • Bring a large pot of salted water to a boil. Add the beans and garlic. Blanch for 3 minutes and drain.
  • In a small bowl, combine the salt and spices.
  • Heat a large saute pan over medium heat. Add the olive oil, honey, and the spice mixture. Let the honey "melt" together with the olive oil and spices.
  • Pat the drained beans and garlic cloves dry with paper towels, add them to the pan, and toss gently to coat them in the honey-spice mixture, 3 to 4 minutes.
  • Turn off the burner, pour Cognac into the pan, and flambe the beans until the alcohol is burned off. To flambe, ignite the alcohol by carefully touching the edge of the pan with the flame of a match or lighter. Novices are best off using fireplace matches or wooden kitchen matches instead of flimsy paper ones. Place the beans and garlic in a dish and serve, drizzling the remainder of the honey-spice mixture over them. Season with extra salt, if needed.

  • Remove ends from beans; wash and cut into 1 inch pieces. Steam for 15 minutes or until tender. Drain and reserve.

  • Heat oil in a frying pan. Add the bacon, onion, garlic plus parsley & sauté until onion is soft & golden brown.
  • Add the beans, salt to taste preference & Creole seasoning. Reduce heat to low & cook gently for about 30 min or until beans are soft (Add a sml amt of water if needed to keep the beans from sticking to the bottom of the pan.

I got the recipe from an friend's mother over 20 years ago and she got the recipe from her mother who had a local cooking show in the southwest Louisana/ southeast Texas area. You can taste the southern Creole influence in this dish. You won't be disappointed!

Scalloped Creole Green Beans image

Steps:

  • Preheat oven to 350 degrees.
  • Fry bacon until crisp and set aside. Saute onion, celery, and bell pepper in bacon drippings until transparent.
  • Transfer onion mixture to a medium sauce pan and add tomatoes, salt, pepper, and sugar. Cook, covered over low heat for 1 hour. (yes--1 hour!).
  • Add cheese to sauce mixture and stir until melted.

Steps:

  • Melt butter in a medium sauce pan over high heat.
  • Add bacon and ham and cook, stirring for 2 minutes.
  • Add onions and cook, stirring until soft, about 4 minutes.
  • Add tomatoes and their juice and cook, stirring for 4 minutes.
  • Add 2 cups of the water, salt, pepper and beans.
