CRISPY ALMOND BUTTER TRUFFLES

Steps:
- In a small bowl, combine the almond butter, honey, cinnamon and vanilla. Stir in cereal and coconut., With wet hands, shape mixture into 1-in. balls. Roll in sunflower kernels. Place on a waxed paper-lined baking sheet. Refrigerate for at least 2 hours or until firm. Store in the refrigerator.

These were my favorites for Christmas--thin and crisp and buttery. Made them for a cookie swap many years ago.

Steps:
- Sift dry ingredients into a bowl.
- Cut in butter.
- Press dough together.
- Shape into small balls and roll in almonds.
- Place on baking sheet 2 inches apart and press with the bottom of a glass dipped in sugar.
- Bake at 300° for 30 minutes until edges are slightly browned.
- Cool slightly and remove to wire rack.

Steps:
- In a bowl, mix almond flour, almond butter, and vanilla extract. Create round balls using your hands.
- Place onto a baking sheet and chill for 20 minutes or until solid.
- In a microwave-safe bowl, melt the chocolate in 30-second intervals.
- Individually coat eat ball in the chocolate and place back onto the baking sheet.
- Sprinkle with sea salt, if desired.
- Chill until chocolate is set.
- Enjoy!

- Mix together almond butter and maple syrup until fully combined and smooth. Add coconut flour and stir until almond butter begins to thicken and turns into a dough.

- Melt the chocolate over a double boiler until completely smooth. Use 1 cup if you want chocolate covered truffles and use 1/2 cup if you want just a chocolate drizzle on top. If dipping, use a fork dip the almond butter balls into the chocolate and return them to the baking sheet. If drizzling, use a fork to drizzle the melted chocolate over the balls. Sprinkle with sea salt if desired.

- Combine almond butter, maple syrup, vanilla, cardamom and almond flour in a small bowl. Mix until smooth and then freeze the mixture for about 30 minutes, you want the mixture to be hard enough to roll into balls, but not so firm that you can’t manipulate the mixture.
- Meanwhile, melt the chocolate. Place chocolate in a double boiler with water in the bottom pot. If you don’t have a double boiler, use a small pot and place the chocolate in a small heat-proof bowl on top. Heat until the chocolate is melted and smooth. Set aside until the almond butter mixture is ready.
- Roll the almond butter mixture into 1-inch balls. If the almond butter mixture starts getting warm and soft, place it back in the freezer for a couple minutes.
- Coat in chocolate: Then roll the almond butter balls in the melted chocolate using a spoon to completely coat the truffle. Sprinkle each truffle with sea salt.
