CRISPY BEAN AND CHEESE BURRITOS
Crispy bean and cheese burritos are guaranteed to be family approved, and perfect for an easy weeknight meal. They include seasoned refried beans and fresh shredded cheese layered inside a tortilla and cooked until crispy. Serve warm, with homemade salsa and guacamole, for dipping.

Steps:
- Combine refried beans, salsa, chili powder, garlic powder, and cumin in a mixing bowl; stir until smooth.
- Spoon about 3 tablespoons of the bean mixture onto the center of a tortilla and smooth into a thin layer. Sprinkle with a large pinch of shredded cheese and roll tightly. Repeat with remaining bean mixture, tortillas, and cheese.
- Heat oil in a large skillet over medium-high heat. Place a few burritos, seam-side down, into the skillet. Cook, turning every 30 seconds, until golden and crispy on all sides, 5 to 8 minutes. Remove to a plate and repeat with remaining burritos.

CRISPY ROLLED BREAKFAST BURRITO
I've always loved the idea of a breakfast burrito, but I've never been crazy about the execution. It always seemed like we were rolling up a bunch of random breakfast ingredients in a tortilla. Plus, it always bothered me that just a little of the top and bottom got browned, I mean, what about the sides? Here I'm going to show you a technique that takes care of both of those issues and will work no matter what ingredients you decide to use.

- Place bacon in a cold, nonstick pan over medium to medium-high heat. Cook until browned, crisp, and foamy, about 10 minutes. Turn off the heat, remove to a paper towel-lined plate, and set aside.
- Place cubed potatoes into the pan of bacon fat and set heat to medium. Season with salt, black pepper, and cayenne. Cook, tossing and turning occasionally, until the potatoes are browned, crispy, and tender, 8 to 10 minutes. Add onions and peppers, and cook until they soften up a bit, 2 to 3 minutes. Transfer everything into a strainer set over a bowl to drain excess bacon fat.
- To make one breakfast burrito, place 2 strips cooked bacon back in the pan. Turn heat to medium and scatter 1/2 of the potato mixture in and around. Scatter over 1/2 of the Cheddar cheese as evenly as possible, and then pour 2 beaten eggs over top.
- Tilt the pan to make sure the egg is evenly distributed. Place a tortilla over the top and press down lightly into the rest of the ingredients. Cook just until the eggs firm up enough to flip, about 1 minute. Use a spatula to carefully, but confidently, flip everything over so the tortilla is now on the bottom. Cook until the tortilla is as browned and crispy as you like, 2 to 3 minutes.
- Remove from the heat and transfer onto a plate. Roll into a burrito and serve with hot sauce, avocado, sour cream, and cilantro. Repeat to cook remaining burrito.

CRISPY BASKET BURRITOS (BAKED TORTILLA BOWLS)
Crispy tortilla bowls are easy to make at home! Fill them with all your favorite burrito fillings or a taco salad. The baked tortilla shells are crispy and not as greasy as deep-fried ones. Just be careful not to burn them when trying to get the inside bottom crispy.

- Preheat the oven to 375 degrees F (190 degrees C).
- Brush oil on both sides of tortillas.
- Invert ramekin on a work surface. Center tortilla over bottom of the ramekin; gently shape tortilla down around sides. Place a double layer of aluminum foil over tortilla and press to form a bowl around the ramekin. Place right-side-up on a baking sheet. Leave about 1/2-inch of tortilla exposed above foil, so it gets browned and crispy when baked. Repeat this step with second tortilla.
- Bake in the preheated oven for 5 minutes. Use tongs to remove the ramekins from shells. Continue baking shells until lightly browned, about 5 more minutes.
- Carefully remove foil from around shells. Flatten foil sheets and invert shells on them. Bring foil up just around bottom of shells to protect top edge.
- Bake shells until browned and crispy, 8 to 10 minutes. Invert shells and continue baking until crisp, 3 to 5 minutes. Watch them carefully, so they don't burn.
- Transfer basket burritos to a rack to cool completely.

- Cook the dry beans, covered with broth by 1-inch, (4-6 cups of broth) in an Instant Pot for 28 minutes with a 10 minute natural release; drain well. If cooking the beans on your stove top, use a Dutch oven or large pot, covering the beans with broth by 1-2 inches; bring to a low simmer, then cover with a lid. Let the beans cook for 45-55 minutes or until fork tender; drain well.**If you don't have time to cook dry beans, use a can of your favorite refried beans.
- Reserve a few of the cooked beans for garnishing the burrito bowls. Place the remaining cooked and tender beans into the bowl of a food processor, pulsing to combine (mixture will still be pretty chunky and sticky at this point). Sprinkle in the oregano, adding the broth a little at a time, pulsing the food processor as needed, until the refried beans are a smooth and creamy consistency. Season to taste with kosher salt and freshly ground black pepper; keep warm. **If you don't own a food processor, the cooked beans can be mashed using a potato masher.
- In a small mixing bowl, combine the sour cream with a bit of the minced chipotles, tasting as you go. **Keep in mind that the chipotles are very hot and smoky, so don't get too heavy-handed, unless you like spicy! - Meanwhile, cook the ground beef in a large skillet over medium-high heat until no pink remains and the beef is fully cooked throughout (165 degrees F. internal temperature); drain any fats that have accumulated in the skillet. Add the taco seasoning to your preferred taste - I used about 1 1/2 tablespoons. Keep the beef mixture warm.
