CRISPY COD & KIEV BUTTER
Enjoy crispy cod and kiev butter with our best ever oven chips and minted peas. All the prep can be done ahead, making it an ideal meal for relaxed Sundays

- To make the kiev butter, mix all the ingredients together in a bowl with a pinch of salt. Chill until needed. Will keep in the fridge for up to a day, or frozen for up to a month.
- Tip the flour into a shallow bowl and season with salt, crack the eggs into a second bowl and tip the breadcrumbs into a third. Pat the fish fillets dry with kitchen paper, then, working with one fillet at a time, dip the fish in the flour, shaking off the excess, then the egg, followed by the breadcrumbs, turning to ensure it's well-coated. If you like a thicker coating, dip the fillets in the egg and breadcrumbs again. At this stage, the fish can be covered and chilled for 2-3 hrs.
- Heat the oven to 220C/200C fan/gas 7. Heat most of the oil in a large ovenproof frying pan over a medium heat and fry the fish for about 5 mins until the coating is golden. Add the remaining oil to the pan if it's dry, then flip the fish fillets, transfer the pan to the oven and roast for 10 mins until the fish is cooked through. Remove the pan from the oven and top each fillet with about 1 tsp of the kiev butter. Return to the oven for 5 mins more to melt the butter over the fish. Meanwhile, gently melt the rest of the kiev butter in a small pan over a low heat. Serve the fish with the buttery roasting juices spooned over alongside a small bowl of the melted kiev butter for dipping chips into.

OVEN-BAKED COD WITH BREAD CRUMBS

- Preheat the oven to 400 degrees F (200 degrees C). Lay cod fillets in a baking dish and season lightly with salt and pepper.
- Combine water and fish bouillon cube in a bowl. Stir to combine and pour over cod.
- Mix bread crumbs, butter, parsley, dill, tarragon, salt, and pepper in a bowl with a fork until crumbly. Sprinkle evenly over cod.
- Bake in the preheated oven until fish flakes easily with a fork and the crust is golden and crunchy, about 20 minutes.

BAKED COD WITH CRUNCHY MISO-BUTTER BREAD CRUMBS
Shiro miso, also known as white miso, is a fermented mash of soybeans and rice with an incredibly rich, sweet flavor that packs a punch. It pairs particularly well with ginger and garlic, and is combined here with those aromatics, butter and panko bread crumbs for a crisp coating. As it bakes, the miso crust caramelizes and forms an addictive flavor that elevates the mild cod.

- Heat oven to 375 degrees. In a medium saucepan, combine rice and 2 1/4 cups water and bring to a boil. Cover and simmer gently over low heat until all of the liquid is absorbed, about 20 minutes. Turn off the heat and let stand (covered) for 10 minutes. Fluff with a fork.
- In a small bowl, using a spoon, mash together butter, ginger, garlic, 3 teaspoons of the miso and 1 tablespoon of the oil. Mix well, then fold in bread crumbs.
- Arrange cod on a large rimmed baking sheet lined with parchment or foil. Rub with 1 tablespoon of the oil and lightly season with salt and pepper. Using the back of a spoon or a butter knife, spread 1 teaspoon of miso over each fillet. Divide the miso-butter-bread crumb mixture equally and sprinkle in an even layer on top of each fillet, pressing gently but do not pack. Roast until top is golden and fish is cooked through to an internal temperature of 145 degrees, about 12 to 14 minutes.
- In a large nonstick skillet, heat the remaining 2 tablespoons oil. Add broccoli, season with salt and pepper and cook over moderately high heat, stirring, until crisp-tender and charred, about 5 minutes. Stir in lemon juice. Serve cod with charred broccoli and brown rice.

COD AND CORN WITH OLD-BAY BUTTER
This one-pot seafood dinner is inspired by the New England clambake, a festive meal cooked in a fire pit and enjoyed with melted butter. - In a large pot, heat 2 tablespoons oil over medium. Add shallot and cook, stirring occasionally, until softened, about 3 minutes. Add tomatoes, season with salt and pepper, and cook, stirring occasionally, until tomatoes soften, about 3 minutes. Stir in garlic until fragrant, about 1 minute.
- Add clam juice and corn, and bring to a boil over high. Cover, reduce heat to medium and cook until corn is tender, about 3 minutes.
- Meanwhile, in a small bowl, combine butter, Old Bay, paprika and remaining 1 tablespoon oil; mix well.
- Season cod with salt and pepper, and add to pot. Cover and cook until cod is flaky and cooked through, about 5 minutes. Stir in scallions and 1 tablespoon of the Old Bay butter; season with salt and pepper.
- Divide everything among four bowls. Garnish with more scallions and season with black pepper. Spread some Old Bay butter over warm crusty bread and serve alongside.

- Preheat oven to 450 degrees F. Add the butter to an 11 x 7-inch baking dish (or another similar size dish that easily holds all of your fillets). Place the dish in the hot oven, just until the butter melts (it will only take a few minutes).
- In a shallow dish, combine flour, cornmeal, seasoned salt, garlic powder and pepper. Dredge the fish in the flour mixture to coat on all sides, shake off excess breading, and place in the hot dish. Very carefully turn the fish to coat with butter. You can also use a spoon to drizzle the melted butter over the top of the fish.
- Bake for 7-8 minutes. Turn the broiler to HIGH and broil the fish for 1-2 more minutes, until the top of the fish is crispy and flakes easily with a fork. Keep a close eye on the fish while it’s under the broiler to make sure that it doesn’t burn.
