KALE CHIPS, THREE WAYS

Yield 6 servings (about 3 cups)

Steps:
- For the classic: Preheat the oven to 300 degrees F.
- Place the kale in a 2-gallon resealable plastic bag. Add the oil and shake and massage the kale to coat each piece entirely. Season with salt and pepper and shake again.
- Spread the kale in a single layer on 2 large baking sheets. Bake until the leaves become crispy, 22 to 26 minutes. If any leaves remain flexible (as opposed to a crisp crunch), return them to the oven for 2 minutes more. Allow to cool completely before transferring to a serving bowl or storage container.
- For the Italian-style: Follow the directions for the classic kale chips. Immediately after removing the kale from the oven, toss the leaves with the cheese and pine nuts until evenly incorporated throughout.
- For the seaside spice: Follow the directions for the classic kale chips. After seasoning the kale with salt and pepper, add the seafood seasoning and cayenne to the bag and massage into the leaves. Immediately after removing the kale from the oven, toss with the lemon zest.

CHEESY KALE CHIPS
An addictive alternative to regular potato chips made with nutritional yeast. Who would have thought that leafy green chips loaded with nutrients could be so addictive? Another recipe from my crazy experiments in the kitchen!

Steps:
- In a very big bowl, drizzle olive oil on the kale, then sprinkle on the nutritional yeast and salt. Stir up the kale and coat the leaves with the dressing with your hands.
- Lay out (not overlapping) on baking sheets and bake at 200F until they get crispy. Rotate racks and flip the chips once they start to get a bit crispy. Make sure to keep an eye on them to make sure they don`t burn, and if you notice certain chips ready much sooner than others, take them out in advance. Baking the chips will take about 40-60 minutes - It will be quicker at a higher temperature, but then you run the chance of burning them, and more nutrients are lost during the cooking.
- EXTRA TIPS: The best way to bake these is by using a food dehydrator, where you just lay them on the sheets and wait until they are nice and crispy, and they are raw, meaning that none of the nutrients are lost. This method will take several hours for them to be ready, but the taste will be superior. *****Nutritional yeast is deactivated yeast, it`s not alive, and it has a slightly cheesy flavor which many vegans like to use as a cheese substitute. It can be found at most health food stores and some big-chain grocery stores.

LEMON KALE CHIPS
We are loving these Lemon Kale Chips. I can't make enough of them --the boys scarf them down hot out of the oven. Yesterday, they ate 3 batches, yes you heard that right, 3 batches of kale chips, after school. Of course, like everything else I make, these are gluten free. http://www.elanaspantry.com/lemon-kale-chips/

- Spread them out over two baking sheets and drizzle with olive oil. Massage oil into each piece of kale, on both sides. Every piece should be a little shiny with oil.
- Sprinkle with a pinch of salt and (optional) pepper, and bake in pre-heated 300-degree (F) oven for 18-24 minutes. Oven times may vary, so keep an eye on them. I recommend checking them around 18 minutes.
