FRIED AND STUFFED RICE BALLS (ARANCINI DI RISO)

Fried and Stuffed Rice Balls (Arancini di Riso) image

Steps:

  • Breading: Put the bread crumbs in a medium bowl. Set aside.
  • Filling: In a medium bowl, combine the risotto, bread crumbs, Parmesan, basil, and eggs. With damp hands, using about 2 tablespoons of the risotto mixture, form the mixture into 1 3/4-inch diameter balls. Make a hole in the center of each ball and insert a cube of Gorgonzola. Cover up the hole to completely enclose the cheese. Roll the balls in the breading to coat.
  • In a large heavy-bottomed saucepan, pour in enough oil to fill the pan about 1/3 of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. (If you dont have a thermometer, a cube of bread will brown in about 2 minutes.) In batches, fry the rice balls, turning occasionally, until golden, about 4 to 5 minutes. Drain on paper towels and serve.
  • In a medium saucepan, bring the broth to a simmer over high heat. Reduce the heat to low and keep the broth hot.
  • In a large, heavy saucepan, melt 2 tablespoons of the butter over medium heat. Add the onion and cook, stirring frequently until tender, about 3 minutes. Add the rice and stir to coat with the butter. Add the wine and simmer until most of the liquid has evaporated, about 1 minute. Add 1/2 cup hot broth and stir until almost completely absorbed, about 2 minutes. Continue cooking the rice, adding the broth, 1/2 cup at a time, stirring constantly and allowing each addition of broth to absorb before adding the next. Cook the rice until tender but still firm to the bite and the mixture is creamy, about 20 minutes. Remove the pan from the heat and stir in the remaining butter, Parmesan cheese, salt, and pepper.

Peanut Butter-Milk Chocolate Rice Krispies® Balls image

Steps:

  • Line 2 cookie sheets with parchment paper.
  • Beat peanut butter and butter together in the bowl of an electric stand mixer fitted with a paddle attachment on medium speed until smooth. Add confectioners' sugar and beat until smooth. Add vanilla extract and kosher salt and beat until combined. Add rice cereal and mix on low to combine; mixture will be quite thick.
  • Roll the mixture into 1 1/2-inch balls and place on one of the prepared sheets. Place in the freezer briefly while you make the chocolate coating.
  • Melt chocolate chips and shortening in a microwave-safe bowl in a microwave on high power in 20-second bursts, mixing after each.
  • Dip the cereal balls in the melted chocolate and place on the clean parchment-lined pan. You can use two forks to help you cover the balls in chocolate and move them to the prepared pan. Sprinkle with sea salt.
  • Let them set up, about 40 minutes.

Steps:

  • In a pot, heat olive oil over medium heat. Add onions and peppers, and cook until translucent.
  • Add garlic and rice, and cook until fragrant.
  • Add white wine, stirring frequently.
  • Slowly add hot chicken broth ½ cup at a time, stirring frequently for about 20 minutes, or until rice is al dente.
  • In a small bowl, combine chipotle powder, garlic powder, onion powder, coriander, smoked paprika, pepper, cumin, oregano, salt, and pepper.
  • Add half of spice mixture to rice.
  • Remove rice from heat. Mix in corn and cheese blend.
  • Cool until room temperature, then chill in the fridge for at least 30 minutes.
  • While mixture is chilling, place avocados, Greek yogurt, cilantro, lime juice, garlic powder, salt, and pepper in a food processor and blend until smooth.
  • Place flour, eggs and bread crumbs in three separate bowls. Lightly beat eggs and add remaining spice mixture to bread crumbs.
  • Drop a heaping spoonful of mixture into the flour. Coat with flour and shape it to about the size of a golf ball. Coat with egg, then dip in bread crumbs.
  • In a skillet, heat oil to 350°F (180˚C).
  • Add well-coated rice balls to hot skillet.
  • Fry for about 2 minutes on each side or until golden brown.
  • Place fried rice balls on a plate lined with a paper towel to drain.
  • Serve warm with avocado dipping sauce.
  • Top with cilantro and queso fresco, if desired.

Perfect Crispy Rice Cereal Treats (Fruit Flavored) image

Steps:

  • Take a pan or baking dish approximately 13x 9 x2 inch size.
  • Lay aluminum foil (or parchment paper or waxed paper) across your pan leaving the ends folded over the edges to to work as handles for when removing your crispy rice cereal treats when finished.
  • Spray inside pan (including lining) with non-fat cooking spray.
  • Use a large heavy saucepan to melt the butter over LOW HEAT for 2 minutes.
  • Add half of the marshmallows and stir constantly over LOW HEAT to melt them. Be careful not to let them stick or burn to the bottom of the pan. It is essential that you do not rush this step!
  • Remove the pan from the heat. Add to the pan half of the crispy rice cereal, then the other half of the marshmallows, and finally the other half of the crispy rice cereal.
  • Stir gently but quickly with buttered or silicone spatula.
  • Pour crispy rice mixture into prepared pan.
  • Using waxed paper or buttered spatula or disposal gloves sprayed with cooking spray, firmly press the hot cookie mixture into the pan (the gloves truly work the best).
  • Let crispy rice cereal mixutre cool until firm (approximately 45 minutes).
  • Turn treats out of pan, peel off foil/paper and cut into squares.
  • Store in an airtight container.
  • TIp: Although I substitute low-fat and low-calorie products for almost everything that I make, this dish definitely turns out best using real butter, and premium quality marshmallows.
  • Tip: If fruit flavored is not your thing, but chocolate and/or peanut butter is, you can substitute the fruit flavored marshmallows with plain mini-marshmallows and then add 3/4 cup of smooth peanut butter and/or 3/4 cups of chocolate chips when adding the second half of the marshmallows.
  • Tip To speed up cooling place in freezer 15 minutes.
  • Tip: Will last 2 days at room temperature or 6 weeks in the freezer.
