SLOW-COOKED SALSA

I love the fresh taste of homemade salsa, but as a working mother, I don't have much time to make it. So I came up with this slow-cooked version that practically makes itself! -Toni Menard, Lompoc, California

Slow-Cooked Salsa image

Steps:

  • Core tomatoes. Cut a small slit in 2 tomatoes; insert a garlic clove into each slit. Place tomatoes and onion in a 3-qt. slow cooker., Cut stems off jalapenos; remove seeds if a milder salsa is desired. Place jalapenos in the slow cooker., Cover and cook on high for 2-1/2 to 3 hours or until vegetables are softened (some may brown slightly); cool. , In a blender, combine the tomato mixture, cilantro and, if desired, salt; cover and process until blended. Refrigerate leftovers.

Quick, healthy and delicious. Just pop the four ingredients into the Crock-Pot in the morning and you'll have a great-tasting meal for dinner. This would also be great for larger gatherings.

Easy Crock Pot Salsa Chicken image

Steps:

  • Place first four ingredients in crock pot.
  • Cook on low 6-8 hours.
  • 30-60 minutes prior to serving, remove chicken, shred and return to crock pot.
  • To serve, use chicken mixture as filling inside tortillas.
  • Add desired condiments.

4 boneless skinless chicken breasts
32 ounces salsa (I use 2- 16 oz. jars)
1 (14 1/2 ounce) can corn, drained
1 (14 1/2 ounce) can black beans, drained
flour tortilla
sour cream
guacamole
lettuce
tomatoes
cheese
salsa

CROCK POT SALSA POT ROAST

This is an incredibly easy, flavorful pot roast. It takes less than 5 minutes to prepare and cooks all day in your slow cooker. The salsa gives it a wonderful, mildly spicy taste. Leftovers would be great as tacos.

Crock Pot Salsa Pot Roast image

Steps:

  • Cut excess fat off chuck roast. Rub meat with cumin, chili powder, and garlic powder.
  • Put into crock pot and pour salsa over the roast.
  • Add an additional half jar of water (6 oz).
  • Cook on low for 7-9 hours.

3 -4 lbs chuck roast

Process until smooth. Refrigerate leftovers. Also freezes well.
  • I use my hand blender to process, then I can chop it all right in the slow cooker and don't have to transfer it to blender container.

  • Place frozen or unfrozen chicken in crockpot.
  • Pour one jar of salsa on top of chicken.
  • Pour two drained cans of corn and two drained cans of black beans on top.
  • Pour taco seasoning on top.
  • Pour last jar of salsa on top.
  • Add 8 oz. of water if necessary.

CROCK POT SALSA STEAKS

This was a throw-together dish that resulted from defrosted meat, no fresh veggies, and a deep desire to break out my crock pot. The meat was falling apart tender (enough so that my 14 month old could eat it with no problems) and the juice was perfect over mashed potatoes. Steps:

  • Press garlic cloves into the crock pot using garlic press, or finely mince using another method, adding juice and pulp to the crock. For the beginner cook, 1 Tbs of dry minced garlic can be substituted.
  • Add all other ingredients to the crock except steaks.
  • Whisk together until well blended and tomato paste is no longer clumpy.
  • Submerge steaks in sauce.
  • Cover and simmer 4-5 hours on HIGH.
