SLOW-COOKER SWEET POTATOES AND SAUSAGE
A great side dish, or a simple sausage and sweet potato main dish, all done in your slow cooker! Toss a package of prewashed salad greens with your favorite dressing, and dinner is served.

Steps:
- Spray 4- to 4 1/2-quart slow cooker with cooking spray. In 10-inch skillet, cook sausage over medium-high heat until no longer pink; drain. Stir in leeks and thyme.
- In slow cooker, layer half the sweet potatoes, sausage mixture and cheese. Repeat with remaining sweet potatoes and sausage mixture. Pour apple juice over top; sprinkle with remaining cheese.
- Cover; cook on High heat setting 2 1/2 to 3 hours or until sweet potatoes are tender.

HEARTY SAUSAGE & SWEET POTATOES
Steps:
- In a large microwave-safe bowl, combine potatoes, 1 tablespoon oil and salt. Microwave, covered, on high for 6-8 minutes or until tender, stirring every 2 minutes., Meanwhile, in a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; remove with a slotted spoon., In same skillet, heat remaining oil over medium-low heat. Add apple and carrot; cook, covered, 5-7 minutes or until carrot is just tender, stirring occasionally. Return sausage to pan. Stir in sweet potatoes and seasonings; cook, covered, 10-12 minutes or until carrot is tender.

In my mind I was thinking that hash browns and smoked sausage would be great together. I was scanning the internet and came up with this recipe. Not exactly what I had in mind, but it sound really good. And I love anything that will go in the crock pot. I bet it would be great with the Campbell's Pepper Jack Cheddar Cheese Soup. - Brown sausage in a skillet set to medium-high heat until fully cooked through and slightly crisp. Drain.
- Add all ingredients except for the heavy cream into slow cooker. Stir to combine.
- Cook on high for about 4 hours or on low for about 6 hours.
- Blend about half the soup using an immersion blender (or just scoop it into your upright blender, then return to slow cooker).
- Add in the heavy cream. Stir to combine. Lid and allow chowder to return to temperature - this takes about fifteen minutes.

- Heat the oil in a frying pan. Gently fry the sausages for about 5 minutes, turning frequently until golden but not cooked through. Remove from the pan and set aside. Tip away all but 2 tsp of fat from the pan.
- Add the bacon and fry for 2 minutes. Add the onion and fry for 8 minutes, stirring frequently until golden. Add the garlic and fry for 1 minute, then turn off the heat.
- Arrange half the potato slices in the base of the cooking pot. Spoon the bacon and onion mixture on top. Season well with salt and pepper, and sprinkle with the sage. Cover with the remaining potato slices.
- Pour the stock over the potatoes and top with the sausages. Cover with the lid and cook on high for 3-4 hours; or til the potatoes are tender and the sausages are cooked through.
