CROCK POT SHREDDED CHICKEN IN BEER
My friend Abby came up with this one. It is absurdly easy and makes a great base for chicken tacos, pulled chicken sandwiches, a change of pace topping for pierogies, or my husband's personal favorite, chimichanga filling. I buy frozen boneless, skinless chicken breasts in 10-lb. bags. No need to thaw: just toss 'em in the crock pot as is.

Steps:
- Put chicken in a crock pot. Pour a bottle of beer over them. Sprinkle with one packet of seasoning mix. Cover and cook on low 6 - 8 hours.
- Remove cooked chicken and pull apart with two forks.
- Strain the liquid from the crock pot through fine mesh. Combine strained cooking liquid, the second pack of seasoning and pulled chicken.
- Serve hot.
CROCK POT WHOLE CHICKEN
Tender, fall-off-the-bone chicken! Skip the overnight refrigeration if you are in a hurry. For variety, eliminate the onion and substitute a quartered lemon or two, stuffed into the chicken cavity. Chef Shapeweaver had a good suggestion: Use Fajita Seasoning Mix #28011 as another variation. Thanks! The standard size slow cookers are a bit too small and a whole chicken won't fit. You'll need a 6-quart slow cooker for this recipe.

Steps:
- In a small bowl, combine the spices.
- Remove any giblets from chicken and clean chicken.
- Rub spice mixture onto the chicken.
- Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I'm always in a hurry).
- When ready to cook, put chopped onion in bottom of crock pot.
- Add chicken. No liquid is needed, the chicken will make its own juices.
- Cook on low 4-8 hours.
- Note: I highly recommend a pop-up timer in the chicken because some crock pots cook faster/slower than others (my crock pot cooks this recipe in 4-5 hours).

- Place chicken in the bottom of the slow cooker. Position the chicken so it's in a single layer and season, if desired (see blog post above for suggestions).
- Cover and cook on LOW or HIGH according to the times listed in blog post above for the size and type of your chicken.
- Once the cooking time has finished, use an instant-read thermometer to check the internal temperature of the chicken at its thickest part. (If you're using bone-in chicken, don't touch the thermometer to the bone.) The chicken should be 165 degrees F. Remove the chicken to a plate or cutting board and let rest a few minutes so the juices can reincorporate (if you plan to shred the right in your slow cooker, you can let it rest there).
