MICROWAVE CROUTONS

Easy and quick, better if you use old bread, any kind.

Microwave Croutons image

Steps:

  • 1. Mix all ingredients.
  • 2. Microwave in high 1 minute and mix.
  • 3. Microwave 1 minute and mix again.
  • 4. Microwave another minute or until the bread cubes are crunchy. Let them cool. Keep them in air tight container.

4 c bread cubes
4 Tbsp olive or canola oil
1 Tbsp garlic powder
1 Tbsp parsley flakes

This was in a recent issue of the kids page in the Sunday paper. It's so easy that even a child can do it and yet it is very good! You can vary the seasonings to your taste.

Steps:

  • Put butter in a medium baking dish (I used a glass pie plate).
  • In a microwave oven, cook butter on high for about 25 seconds or until melted.
  • Stir in the parsley, paprika, garlic salt and pepper.
  • Then add the bread.
  • Stir until bread cubes are coated.
  • Microwave uncovered for 3 minutes; sitrring the cubes once every minute until bread is golden and crisp.
  • Sprinkle over a tossed salad.

2 tablespoons butter
1/2 teaspoon parsley flakes
1/8 teaspoon paprika
1/8 teaspoon garlic salt
1/8 teaspoon pepper
2 slices bread, cut in 1/2 inch cubes (I used one whole hot dog bun)

Steps:

  • Heat the olive oil in a large (10-inch) saute pan until hot. Add the bread and cook over medium heat, tossing frequently, until the bread is evenly toasted and browned. Sprinkle with salt and pepper.

  • Put bread in a microwave safe 7 x 11 dish. Cook in the microwave for 2-3 minutes on high.

  • Heat the oven to 220C/200C fan/gas 7. Rub the whole garlic clove over both sides of the sourdough. Tear it into rough chunks and toss with the oil, a good pinch of salt and the seeds.
  • Spread out on a baking sheet and bake for 8-10 mins until golden and crisp. Mix with the chopped parsley. Sprinkle on soup or a salad for added crunch.

Steps:

  • Preheat oven to 300. Line a baking sheet with a silicone baking mat.
  • Stir olive oil and garlic together in a bowl. Let sit at room temperature until flavors are infused, about 3 hours.
  • Place bread cubes in a large bowl. Pour garlic oil through a strainer onto the bread; toss to coat bread with oil. Add 1/2 cup Parmigiano-Reggiano cheese, Italian seasoning, paprika, black pepper, salt, and cayenne pepper; toss to coat. Spread bread cubes out in a single layer on the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Turn croutons and bake 15 minutes more. Push croutons together with a spatula so that they are in a compact rectangle on the baking sheet and no longer spread out; sprinkle remaining 1/4 cup cheese over the top. Bake until cheese is melted and the bread is crispy and crunchy, 10 to 15 minutes more.
