CRISPY BAKED CHICKEN WINGS

Steps:
- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.
- For the dry rub: Combine the brown sugar, salt, black pepper, granulated sugar, paprika, chili powder, garlic powder, onion powder, cumin, cayenne and celery seeds in a small bowl.
- Remove the wings from the oven and add to another large mixing bowl. Season well with some of the rub, and then toss to coat. (Reserve the remaining rub for another use.) Serve immediately.
CRISPY BAKED CHICKEN WINGS
Baking wings yields crisp skin without the mess and constant tending of frying. Divide the wings between our two sauces, or double one sauce recipe and use it on all 60 wings.

- For buffalo sauce:
- Mix first 4 ingredients in a medium bowl; let stand for 5 minutes. Whisk in hot sauce; keep warm.
- DO AHEAD: Can be made 1 week ahead. Let cool completely; cover and chill. Rewarm before using.
- For ginger-soy glaze:
- Bring all ingredients and 1/4 cup water to a boil in a small saucepan, stirring to dissolve honey. Reduce heat to low; simmer, stirring occasionally, until reduced to 1/4 cup, 7-8 minutes. Strain into a medium bowl. Let sit for 15 minutes to thicken slightly.
- DO AHEAD: Can be made 5 days ahead. Cover; chill. Rewarm before using.
- For wings:
- Preheat oven to 400°F. Set a wire rack inside each of 2 large rimmed baking sheets. Place all ingredients in a large bowl; toss to coat. Divide wings between prepared racks and spread out in a single layer.
- Bake wings until cooked through and skin is crispy, 45-50 minutes.
- Line another rimmed baking sheet with foil; top with a wire rack. Add half of wings to ginger-soy glaze and toss to evenly coat. Place wings in a single layer on prepared rack and bake until glaze is glossy and lightly caramelized, 8-10 minutes.
- Toss remaining half of wings in Buffalo sauce. Serve immediately (no need to bake).

- Whisk together the buttermilk, hot pepper sauce, 1 teaspoon salt, 1 teaspoon black pepper, onion powder, and garlic powder in a bowl; pour into a resealable plastic bag. Add the chicken wings, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 12 to 24 hours.
- Preheat an oven to 400 degrees F (200 degrees C). Grease two baking sheets with nonstick cooking spray.
- Combine the crushed cornflakes, flour, cornmeal, and salt and pepper to taste in a bowl. Remove the chicken wings from the marinade, and squeeze off excess. Discard the remaining marinade. Press the wings into the cornflake mixture and place onto the prepared baking sheets. Spray the top of the wings with nonstick cooking spray.
- Bake in the preheated oven until the meat is no longer pink and is pulled easily from the bone, 30 to 40 minutes. While the chicken is cooking, stir together the honey and red pepper flakes in a small saucepan over medium heat until the honey thins. Keep warm until the wings are ready. Once the chicken has cooked, place the wings into a large mixing bowl and drizzle with the honey sauce. Toss until evenly coated. Now you will have a big pile of hot, crunchy, spicy, sticky wings.

- Remove tips from chicken wings and reserve for stock if desired; separate wings at joint, if not already seperated.
- In large bowl, mix together mustard, butter, salt and cayenne pepper. Add wings, tossing to coat.
- In shallow dish, combine bread crumbs, Parmesan cheese and oregano. Press wings into crumb mixture to coat all over; arrange on rack on foil-lined rimmed baking sheet.
- (Make-ahead: Cover and refrigerate for up to 4 hours.).
- Roast in 400°F (200°C) oven, turning once, until crisp and juices run clear when wings are pierced, about 45 minutes. The wings are more crunchy if you bake them on a rack and let air flow all around instead of directly on the baking sheet.

- Heat oven to 400ºF.
- Mix sour cream, 3 Tbsp. mustard and 2 Tbsp. parsley until blended. Refrigerate until ready to use.
- Line shallow pan with foil; spray with cooking spray. Whisk eggs and remaining mustard in shallow dish until blended. Combine cereal crumbs, cheese and remaining parsley in separate shallow dish. Dip wings, 1 at a time, in egg mixture, then in crumb mixture, turning to evenly coat both sides of each wing; place in prepared pan.
- Bake 40 min. or until done. Serve with sour cream mixture.
