A recipe created by accident. :) The bottom will be chewy while the top is crusty. Not a usual brownie, I guess, and it could be a pan cookie instead.

- Preheat oven to 375°F Grease or line 20cm round pan.
- Mix all ingredients. Do not overmix. Batter will be thick.
- Spread batter into greased/lined pan.
- Bake for 25 minutes. Do not overbake or the top will be too chewy.

BROWNIE PIE CRUST

Steps:
- 1. Prepare a 9" pie plate or springform pan with food release spray.
- 2. Combine ingredients, just until blended.
- 3. Spread mixture into baking dish. Bake at 350* for 15-20 minutes -- do not over bake.
- 4. Remove from the oven and allow to cool 20 minutes. After 20 minutes, with buttered fingers, gently and evenly press the mixture along the bottom and up the sides of the pan, to form a crust. Cool completely.
- 5. NOTE: That's it -- you're done! Try using this yummy crust with my 3-ingredient "Triple Treat Pie" filling recipe.

This looks like a lot of ingredients and a lot of work, but it is pretty easy and they are so worth it! This has become our family favorite and most requested treat! Enjoy warm topped with ice cream.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Mix oats, 3/4 cup flour, brown sugar, baking soda, and 1/4 teaspoon salt together in a bowl. Stir 3/4 cup melted butter into oat mixture until evenly coated. Measure 3/4 cup oat mixture and reserve for later. Press remaining oat mixture into the prepared baking dish.
- Bake in the preheated oven until lightly browned, about 5 minutes.
- Combine white sugar, 1 cup melted butter, and vanilla extract in a bowl. Beat eggs, 1 at a time, into sugar mixture, mixing well after each addition, until thoroughly blended.
- Sift 1 1/2 cups flour, cocoa powder, and 1 teaspoon salt together in a bowl; stir into sugar-egg mixture just until batter is blended. Fold chocolate chips into batter; pour over oat crust. Sprinkle reserved oat mixture over batter.
- Bake in the preheated oven until a toothpick inserted in the center of the brownies comes out clean, 35 to 40 minutes.

- Preheat your oven to 350°F. Line an 8x8-inch square baking pan with parchment paper, leaving a 2-inch overhang on each end and butter the exposed sides.
- In a large bowl over a pot with ½-inch of simmering water, stir together chocolate and butter until completely melted, smooth and glossy.
- Beat eggs with sugar vigorously in a large bowl using a whisk or hand mixer until pale, thick and fluffy. When you lift up the beaters, the egg mixture will form a slowly disappearing ribbon on the surface of the mixture when it falls back into the bowl. It will take a bit more effort to do it by hand, but I really like using a whisk! Beat in vanilla and salt then stir in warm chocolate mixture until evenly blended. Stir in flour until well incorporated and smooth. Pour batter into prepared pan and use the back of the spatula to smooth out the surface.
- Bake for 20-25 minute until slightly puffed and a toothpick inserted someplace between the edge and the center comes out with a few moist crumbs. Transfer pan to a wire rack and let cool completely before slicing.

- Place chocolate and butter in a large microwave-safe bowl. Heat on high power in 30 second increments, stirring between each, until chocolate and butter are melted and smooth (about 2 minutes, depending on your microwave).
- Stir sugar and cocoa into chocolate and butter mixture using a spatula or wooden spoon. Stir in eggs and vanilla, then stir in salt. Mixture will be grainy looking but smooth. Stir in flour carefully.
- Pour batter into prepared pan. Bake for 25-35 minutes, or until the top is no longer glossy and a toothpick comes out with just a few crumbs when placed 2-inches from the side of the pan. Cool completely before slicing. I prefer mine baked only 25 minutes; if you want yours less fudgy, bake longer.

- Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan or line with aluminum foil or parchment paper, leaving an overhang on the sides to lift the finished brownies out (makes cutting easier!). Set aside.
- In a microwave-safe bowl, combine the butter and 2 ounces of chopped chocolate. Melt in 30 second increments, whisking after each, until completely smooth. Whisk in the sugar until completely combined, then whisk in the eggs and vanilla. The batter will be light brown and a little dull looking.
- Add the cocoa powder, flour, salt, remaining 2 ounces of chopped chocolate and the chocolate chips. Fold it all together with a rubber spatula or wooden spoon. Batter will be very thick. Spread evenly into prepared pan.
- (See note about how to tell if brownies are done in the post above.) Bake for 30 minutes, then test the brownies with a toothpick. Insert it into the center of the pan. If it comes out with wet batter, the brownies are not done. If there are only a few moist crumbs, the brownies are done. Keep checking every 2 minutes until you have moist crumbs. My brownies take 31-32 minutes.
