CUBAN SANGRIA

This is a recipe for Cuban Sangria that I first had at a pool party in the Little Havana area of Miami. It was made by the host in a large cooler and dipped out during a BBQ and party. It was the best Sangria I have ever had and my wife and I have made it several times since to serve with rave reviews. BEWARE! It is a strong drink and in the summer sun it will creep up on you as it goes down so refreshing.

Steps:

  • Wash and cut the fruit into small chunks.
  • You do not need to peel the fruit, just wash and chunk.
  • Place the cut fruit pieces into a large cooler (we buy the Styrofoam disposable coolers with the lid).
  • Pour the full contents of the red wine and rum over the fresh fruit, mixing and stirring.
  • Cover the cooler and let sit for at least 24 hours in a dark cool place.
  • (This is the hard part.).
  • Serve the mixture by spooning out with a ladle into cups with the fruit and liquid.
  • Can be poured over ice, but is equally as good straight from the cooler.

TASTY SANGRIA

There's a Cuban restaurant in Atlanta that my wife and I love called Mambo. After enjoying their sangria, I had to try to make it myself. This is a good approximation of their delicious libation. Since you're going to pour juice and sugar into it, don't waste a good bottle of wine. Buy the cheapest one you can find at the grocery store.

Steps:

  • Pour the bottle of wine into a pitcher. Reserving one of the oranges, juice the other three oranges and all of the limes into the pitcher. Stir the sugar into the wine/juice mixture until dissolved.
  • Peel the other orange and remove the pith. Core the pear. You can peel the pear if you want, though it's not necessary. Slice the orange and the pear into small, roughly 1/2 inch chunks. Put them into a large ziploc bag.
  • Add the cinnamon and nutmeg to the pear and orange chunks in the bag. Shake lightly to coat the fruit with the spices. Empty the contents of the bag into the pitcher (watch for splashes!). Stir.
  • Put the pitcher in the refrigerator for at least four hours, and up to overnight, to let the flavors marry and let the fruit become saturated with the liquid.
  • Taste and stir in more sugar if you feel you need to. Serve over ice.

TRADITIONAL SANGRIA

Rafael Mateo, the proprietor of Pata Negra, a Spanish wine bar in the East Village, formulated this sangria that is winelike and very refreshing, with a keen balance of tart and fruity flavors. Unlike many recipes, which specify Rioja made from the tempranillo grape, Mr. Mateo prefers using garnacha from Campo de Borja in central Spain, which he said has backbone without being overly tannic. He lightens the blend by adding rosé, and sweetens it with orange liqueur and orange soda rather than with fruit purée, a common addition, which he dislikes because, he said, it gives the sangria a grainy texture. He experimented with orange juice rather than soda, but found it, too, changed the texture. Finally, he allows the punch to knit together overnight and adds cut fruit only at the end, as a garnish.
