CRUNCHY CUCUMBER ROUNDS

I found the recipe for these cute crisp appetizers in an old cookbook several years ago. They're fun to serve because people inevitably ask, "What's in this?" Make sure your cucumber slices are dry so the fruit mixture will stick to the tops. -Phyllis Pollock, Erie, Pennsylvania

Crunchy Cucumber Rounds image

Steps:

  • In a small bowl, combine the apple, pineapple, pecans, sour cream and salt. cover and refrigerate until chilled. , To score cucumbers, cut lengthwise strips through peel. Cut each cucumber into 16 slices. Blot with paper towels to remove moisture. Spoon 1 teaspoon apple mixture on each slice.

Steps:

  • Peel cucumbers and cut lengthwise into quarters; remove seeds; finely chop.
  • Remove liquid by drying and pressing onto paper towel.
  • Combine cream cheese, cucumbers, green onions, salt and pepper; mix well.
  • Cut rounds with cookie cutter from slices of bread, you can get two or three per slice.
  • Spread with cucumber mix.
  • Top with paprika or chili power.

Steps:

  • Stir together cream cheese, herbs, zest, lemon juice, table salt, and cayenne.
  • Slice 32 (1/8-inch-thick) rounds from cucumber with slicer. Trim bottoms from radishes, then slice into 32 (1/16-inch-thick) rounds with slicer. Top each cucumber slice with a radish slice and 1/2 teaspoon herbed cream cheese. Sprinkle with coarse sea salt and serve immediately.
  • *Available at Asian markets and cookware shops.

4 oz cream cheese, softened
2 tablespoons thinly sliced fresh mint
2 teaspoons finely chopped fresh chives
1/2 teaspoon finely grated fresh lemon zest
1/4 teaspoon fresh lemon juice
1/8 teaspoon table salt
Pinch of cayenne, or to taste
1/2 medium seedless cucumber (usually plastic-wrapped)
3 medium radishes
Coarse sea salt for sprinkling
Special equipment: a Japanese Benriner* or other adjustable-blade slicer

Cucumber Rounds with Herbed Cream Cheese image

Steps:

  • ADD the softened cream cheese, dill weed, dill pickle juice, granulated onion or onion powder, granulated garlic or garlic powder, and freshly ground black pepper to the bowl of a stand mixer, a large bowl with a hand mixer, or a bowl with a sturdy spoon. Mix on high (or mix aggressively by hand) until the cream cheese is soft, smooth, and all other ingredients are evenly distributed.
  • SCRAPE into a pastry bag fitted with whichever tip you prefer, a zipper top bag, or a bowl which is then covered with plastic wrap and refrigerate for at least an hour before serving.
  • SLICE the chilled cucumber into ¼-inch thick rounds. Pipe, squeeze, or spread the herbed cream cheese mixture into the center of each round. Serve immediately.

  • Peel cucumbers and cut into 1/2" slices. Using a melon baller, cut out the center of each cucumber slice, being sure to leave bottom of slice intact.
  • Combine salmon, sour cream, dill, lemon juice and capers in a small bowl and stir until well blended. Cover and chill 2 hours to allow flavors to blend.

  • Cut cucumber into 24 slices. Use melon baller to scoop out indentation in center of each slice; discard removed centers or reserve for another use. (See tip.)
  • Reserve 1 Tbsp. dill. Mix remaining dill with all remaining ingredients until blended.
  • Fill cucumbers with cream cheese mixture; sprinkle with reserved dill.
