Steps:
- Place the green beans in a large saucepan or pot with one inch of water. You may place them in a steamer insert if you have one. Bring to a boil, cover and cook for 5 minutes, they should still be firm and bright green. In a small bowl, stir together the soy sauce, balsamic vinegar and sugar; set aside. Heat the sesame oil in a large skillet over medium heat. Add garlic and cook until starting to brown. Add the green beans and stir to coat with the oil. Stir in the soy sauce mixture and simmer for a couple of minutes uncovered to reduce the sauce. Transfer the beans to a serving dish and pour the sauce over them

Steps:
- Heat a large skillet over medium-high heat for 3 minutes. Add the oil and heat another minute.
- Scatter the beans evenly in the pan and sprinkle with the salt (see Cook's Note). Allow the beans to cook undisturbed until browned, blistered and beginning to split on the first side, about 3 minutes. Using tongs or a slotted spatula, flip the beans and continue to cook another 2 minutes. Flip one more time and cook until all the beans have a good amount of golden brown, an additional minute. Remove to a paper towel-lined plate to drain. Serve with your favorite dip or simply with a squeeze of lemon.
DAD'S PAN-FRIED GREEN BEANS
Once upon a time, Dad received a similar recipe with a bundle of fresh green beans. He made the recipe once and then lost the card. After many attempts to recreate that flavor, he declares that this, his own recipe, is even better!

SOY GLAZED GREEN BEANS
Steps:
- Bring a large pot of water to a boil and season generously with salt. Add the green beans and blanch until crisp-tender, 2 to 3 minutes. Immediately transfer to an ice bath to stop the cooking, and then remove to a baking sheet lined with paper towels or a cooling rack to drain.
- In a large saute pan over medium-high heat, add the canola oil and butter. When the butter is melted, add the garlic and stir until fragrant, 1 to 2 minutes. Add the green beans, soy sauce, sesame seeds, and black pepper and saute until the sauce reduces slightly and thoroughly coats the green beans, being careful not to overcook beans.
- Transfer to a serving dish and serve hot.

MY MOM'S FRIED GREEN BEANS
My mom and dad went to eat and a steak house in Dallas and this was their appetizer. So my mom surfed the net and came up with this one. My picky 3 old loves them.

Steps:
- 1. Mix all dip ingredients, then keep in the refrigerator to let the flavors blend. These measurements are very approximate. I recommend starting with the mayonnaise, then adding the hot sauce to taste, then adding the honey to taste, then the sesame oil to taste. My husband then usually adds more hot sauce to his portion of the dip.
- 2. Mix soda with flour. Be careful not to over-mix.
- 3. Dip trimmed green beans into batter, then fry in hot oil until lightly browned. DO NOT blanch the beans ahead of time, or you will lose the delicious texture.

DRY-FRIED GREEN BEANS
Tasty side dish when green beans are fresh. If you have access to Chinese yard-long beans you can use those too, just cut into 2-3 inch lengths. In any case the beans must be fresh, not canned or frozen. The canned and frozen forms have too much moisture in them to fry properly.
