DANDELION SALAD

This is a very good use of all those annoying dandelions growing in your yard. Just so long as you don't have a dog! Top with your favorite dressing. I prefer hot bacon dressing!

  • In a medium bowl, toss together dandelion greens, red onion, and tomatoes. Season with basil, salt, and pepper.

It seems like a lot of greens but they cook down to almost nothing.And if you want you can replace the dandelion with spinach. I use hot sausage which gives this a real kick, but if you rather go for mild or just use chopped beef.

Steps:

  • Blanch greens for 3 minutes and set aside.
  • Brown meats, onion and garlic, add bread crumbs, parsley, dried herbs, salt, pepper, egg, and milk.
  • Squeeze dandelion greens of all moisture.
  • In a buttered casserole alternate layers of dandelions, pasta, crumbled browned meat mixture and tomato sauce.
  • Top with cheese and bake 350 degrees for 20-30 minutes.
  • Garnish with hot pepper flakes and Parmesan cheese and serve with crisp fresh bread.

Steps:

  • To a large pot of boiling water, add some salt and the dandelion greens. Cook until bright green, 2 to 3 minutes. Remove the greens with a spider and drop them in a bowl full of ice water to stop the cooking.
  • Add the olive oil to a large saute pan over medium-high heat. Once hot, add the garlic and saute until fragrant, about 1 minute. Add the greens and toss until warmed through. Season with salt and pepper.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a large casserole dish.
  • In a skillet over medium heat, cook the ground beef until evenly brown. Drain grease. Mix in garlic, and season with salt and pepper. Stir in spinach, and cook until heated through. Stir in the uncooked egg noodles, and transfer to the prepared casserole dish. Mix in cream of mushroom soup and milk, and sprinkle with cheese.
  • Bake 45 minutes in the preheated oven, until bubbly.
