DANISH PANCAKE BALLS

- Add the egg whites to a bowl and whip with an electric hand mixer until stiff peaks form. Mix together the flour, granulated sugar, baking powder, baking soda and salt in a large bowl. Add the egg yolks and buttermilk to the dry ingredients and mix thoroughly with a wooden spoon until no lumps remain. Gently fold in the beaten egg whites. Transfer the batter to a pitcher for easy pouring into the pan.
- Heat the ebelskiver pan over medium heat. Drizzle each hole with approximately 2 tablespoons of canola oil. Test the heat of the pan with a teaspoon of the batter; it should bubble immediately. When the pan is hot enough, fill each hole to the top with the batter. Cook 2 to 3 minutes, then poke the middle of each pancake ball with a skewer and give the pancake ball a quarter turn. Wait 1 minute, then turn completely over. Cook 2 to 3 minutes more. The pancake balls are done once a skewer inserted into the center comes out clean.
- Dust with confectioners' sugar and serve topped with strawberry jam.
DANISH BUBBLE
The rough translation of this dish means "scrambled food" and is a great dish to use up leftovers from the night before. We have had this for breakfast as well as supper. Serve with ketchup, HP sauce and toast.

Steps:
- Chop onions finely and dice meat and potatoes into 1 inch cubes.
- Heat a third of the oil or butter in frying pan.
- Brown the meat until golden brown and remove meat from pan.
- Add another third of the oil or butter and brown the potatoes at high heat until they are golden and crispy on the outside. Remove potatoes from pan.
- Add the remaining oil or butter to pan and cook the onions until clear.
- Add meat, bacon, chives and potatoes to pan.
- and heat through.
- Season with salt, pepper and Worcestershire sauce.
- Fry the eggs in butter, sunny side up and place on top of meat mixture.
- (You can also scramble the eggs and mix all together).
- Top all of this with the grated cheddar and serve hot.

DANSK AEBLESKIVER (DANISH DOUGHNUTS)
My husband is from Denmark, and making this traditional Danish favorite is a family affair. I make the batter, my husband does the cooking, and the kids help us make them disappear! We like to dip our aebleskivers in raspberry jam, maple syrup, and powdered sugar. The cardamom gives them that something extra. No wonder this recipe is a family favorite! Danish cooks use a long knitting needle to turn the doughnuts, but you can use a fork, too.

- Preheat an electric aebleskiver pan according to the manufacturer's directions.
- Beat together the eggs, buttermilk, and butter in a mixing bowl until smooth. Gradually whisk the flour, salt, sugar, baking soda, and cardamom into the egg mixture until evenly blended and smooth.
- Spoon 1 tablespoon of shortening into each cup of the preheated aebleskiver pan, and allow the oil to heat. Pour batter into each cup until 3/4 full. Allow the batter to cook in the bottom of the cup 3 to 4 minutes until golden brown, then use a long skewer or knitting needle to lift one edge and give it a 1/4 turn. The uncooked batter will spill over into the cup, and cook. Continue lifting and turning the edges until the batter is fully cooked into a golden brown ball. Drain on paper towels.
